Cold brewed coffee is sweeping the world. But in many coffee shops, cold brewing coffee is more expensive. Do you want to know why?

In fact, what makes cold-brewed coffee more expensive is the time it takes to make coffee. Usually, it takes less than 10 minutes to make some hot coffee, even including grinding time. On the other hand, cold brewing takes at least three to five hours. Some processes can take up to 24 hours.

Cold-extracted coffee is not simple coffee with ice cubes or chilled coffee, but is extracted directly with ice water or ice-soluble water.

According to its production method, cold extraction coffee can be divided into two kinds: slow drop cold immersion method and immersion cold extraction method.

1 slow drop cold brewing

You need a specific set of tools and utensils to make slow cold brewed coffee. In the big glass container at the top is some ice. The water from the melting ice falls into the ground coffee and drags the extracted coffee into the jar at the bottom. The whole process takes 3-5 hours.

This time-consuming process also explains why coffee shops usually only have a limited amount of cold-brewed coffee every day. On weekends or during peak hours, if you are not early enough, you may not be able to get anything.

Ice drop coffee powder generally requires special utensils to achieve. The glass container above the iced coffee is filled with ice cubes. The melted water slowly drips into the coffee powder below. After soaking through the coffee powder, it drips out from below. The whole process will take 3-5 hours at the earliest. Therefore, the quantity of cold coffee in many cafes is limited, and when there are too many people on weekends, it may be too late to go.

You can make iced coffee at home, but you need a special set of tools to do it.

This kind of ice drop coffee can also be made at home, but some household ice drop coffee utensils (cold brew dripper) need to be specially prepared.

Characteristics of slow drop cold brewing:

-A strong sense of hands-on operation, suitable for coffee lovers who are used to making things by hand.

-visual shock and strong sense of vision

-less time-consuming (3-5 hours) shorter time (compared with 👇 's second cold extraction method)

-the concentration is lower than that of soaking cold brew, so the taste is lighter because the extraction time is short, the coffee taste is clearer and the bitterness is lower (of course, the bitterness is also related to coffee beans)

2 soak in cold brew

As the name suggests, in order to make cold soaked coffee, simply put the coffee powder in cold water-water at room temperature may be effective, but the cooling effect is better. Just find a sealed glass container. Put the coffee powder at the bottom of the container, then pour cold water on the coffee. The recommended coffee-to-water ratio is about 1:8, but you can adjust it flexibly to your taste.

Seal the container and let it stand at room temperature for 12-18 hours. You can also put it in the refrigerator, but it takes more time to produce that strong smell and balance.

To soak in cold water, as the name implies, is to soak coffee powder directly in ice water (you can also feel warm water). The simplest and roughest way is to find a glass jar with a lid, pour coffee powder, and add water at home. After that, close the lid and soak at room temperature for about 12-18 hours. It doesn't matter if it takes a long time. Can also be put in the refrigerator freezer, because the temperature is low, the extraction time is longer, many people recommend about 24 hours. However, the difference in extraction time and temperature makes the taste of coffee different. If you are interested, you can experience it yourself.

If time is up, please filter out the coffee grounds in the brewed coffee. A paper or cloth filter absorbs the extracted coffee oil, so the oily taste of the coffee can be removed, but you can use a metal filter to maintain the aroma.

When the time is up, take it out and use the filter to filter out the coffee grounds. There are many kinds of filters to choose from, but the general metal filter can retain the extracted coffee oil, so the taste will also be a little oily. If you use filter paper or filter cloth, the coffee oil will be absorbed by filter paper or filter cloth, and the taste will be slightly different.

Characteristics of soaking cold brewed coffee:

-release operation is simple

-more time (12-18 hours, some people say 24 hours in the refrigerator) takes a long time, usually 12-18 hours

-very concentrated and full-bodied
