Why is coffee encyclopedia coffee bitter?
A seminar on coffee was held at school a few days ago. After an hour and a half of speech, I asked a question: "Why is coffee crying?"
Seemingly simple questions make it harder to answer. All of you here answered nothing but the allegorical "Life is bitter, love is bitter, so coffee is also bitter".
This question can be said to be one of the most basic questions about coffee since the formation of coffee tradition. Although it is only a perspective, the coffee man should give his own answer.
In conclusion, "although the bitter taste of coffee is dominant, it is not only bitter." Coffee is naturally bitter because it contains caffeine, a substance that dissolves and produces bitterness. But this is the bitterness that can be felt in parsley, salt and even sugar, not just in coffee. On the contrary, sour, sweet and salty taste account for a larger proportion than bitter taste. We only feel the bitter taste because it is influenced by the "bitter coffee" that exists in the subconscious.
If coffee is only bitter, how can it continue to be favored and cherished by human beings during these millennia? Bitterness is the least popular of the four flavors.
Coffee contains more than a thousand flavors. The aroma of flowers, grass, fruit, warm sunshine, thick leather and many other aromas inject a lot of subtle stimulation into the coffee. Many of these fragrances are mixed with each other. On the one hand, they intensify each other, on the other hand, they complement each other, not the only one, but the harmony of the whole.
So it seems that a cup of coffee can feel bitter but not purely bitter, sour but not just sour, salty but not salty. This is like the performance of a symphony of "hometown song", which is a coordinated whole.
As the so-called "good medicine tastes bitter", coffee with a refreshing and bitter taste is not a spiritual medicine to cure our inner pain and give us spiritual comfort.
