Geographical differences

Jamaican Blue Mountain Coffee

As can be seen on the map, Jamaica is an island country located in the Caribbean region of North America, belonging to the tropics. To the north is Cuba, next to Central America. The coffee-growing area is mainly distributed around the Blue Mountains in the eastern part of the island of Jamaica, which is named Blue Mountain because the sun shines directly on the blue sea when the weather is clear and the mountains reflect blue.

The Lanshan Mountains have the highest mountain in the area, with a peak of about 2256 meters. Only those below 1700m can grow coffee trees. These are the local protected forests. It is located in the coffee belt, with fertile volcanic soil, fresh air, no pollution, rainy all the year round, high humidity and large temperature difference between day and night. In addition, the soil is rich in nitrogen and phosphorus, which is very suitable for the growth of coffee, and regular rainfall and under the hazy clouds on the island keep it away from the hot sun. The combination of all these factors led to the Blue Mountain Coffee.

Indonesia Gold Manning Coffee

Indonesia is a country made up of many islands, large and small, centered around the equator. Coffee production is the third in the world, most of which are Robusta varieties. Arabica is also grown in Java, Sulawesi and Sumatra, especially Mantenin coffee in Sumatra, which can be said to be the representative of Indonesian coffee, of which GRADE 1 is the best with the least defective beans.

This company is a very famous local coffee acquisition company in Indonesia, mainly buying Mantenin Coffee. It has acquired almost all the best producing areas in Indonesia, so most of the beans produced by PWN are unique boutiques. Gold Mantning is the product produced by this company. After the acquisition of raw beans, the beans are selected by hand to select the full and flawless beans. Finally, these beans can be divided into Golden Manning as if they had gone through the draft.

The difference between treatment methods

Washing method

Traditionally, Jamaican Blue Mountain Coffee only uses water to treat raw beans. After harvest, the fruit must be screened by bleaching water, remove the peel and pulp, let it ferment for 12-8 hours, then put the fermented beans into the pool and move back and forth, using the friction of the beans and the power of running water to wash the coffee beans until smooth and clean. The washed raw coffee beans need to be dried until the water content is 12-14%. The dried raw coffee beans need to be screened again and finally packed and stored in the warehouse.

With the development of boutique coffee market, small batches of Lanshan No.1 coffee have been launched in Lanshan area since 2020.

Wet planing method

Due to the rainy season in Indonesia, the processing of raw coffee beans cannot be dried in the sun for as long as in places such as Africa, so a treatment method has been developed: wet planing.

Remove the exocarp of the coffee fruit by a practical machine, rinse the impurities with clean water, put it in a sealed place to ferment for 3 hours, and then dry it for one or two days. At this time, the water content of the raw coffee beans is 30-50%, and the beans are in a semi-soft and semi-hard state. Then remove the pectin layer and parchment from the raw coffee beans and continue to dry in the sun. It generally takes 2-4 days to reach a moisture content of only 12-13%. The drying time of wet planing method is much shorter than that of sun drying method and washing method. Because the wet planing method will remove the parchment layer, the raw beans will show cyan color, and the beans will be soft and easy to be deformed, so they are in the shape of sheep's hooves.

Similarly, in recent years, individual farms in Indonesia have begun to produce sun-treated manning coffee.

Jamaica Blue Mountains

Blue Mountain Coffee belongs to an ancient variety of iron pickup, with bronzed top leaves, oval beans, elegant flavor and poor disease resistance, so its yield is low.

According to the altitude of Jamaica, the coffee grown in the Blue Mountains is divided into Jamaican Blue Mountain Coffee, Jamaican Alpine Coffee and Jamaican Coffee. Only Arabica Tippica coffee from 910-1700 meters above sea level, including St. Andrews (St.Andrew), St. Mary (St.Mary), St. Thomas (St.Thomas) and Portland (Portland) can be called Jamaican Blue Mountain Coffee (Jamaica Blue Mountain). Those below 910m above sea level are called Jamaican Alpine Coffee, while those below 460m are the preferred coffee for Jamaica.

Among them, the blue mountain of Jamaica is divided into four grades, and the basic standard of the highest quality blue mountain No. 1 raw bean is more than 17 mesh, the defect rate is less than 2%, and the moisture content is about 13%. It looks like a uniform and full blue-green raw bean. The flavor is both sour, sweet, bitter, fragrant and mellow.

Golden Manning

The varieties of Golden Manning are Aeng and TimTim,TimTim, which are hybrids of the ancient Arabica varieties, Iron pickup and Robusta, while the Aeng series belongs to the hybrid of Kaddura and TimTim and still carries the Robusta gene, also known as Katim. Both Aeng and TimTim were resistant to coffee leaf rust and coffee berry disease and had high yield.

The golden mantenin coffee beans in front of the street are from Lake Tawa in the Gaio Mountains northwest of Sumatra, belonging to the first batch of Mantenin. First of all, the Mantenin raw beans purchased by PWN are more than 18 orders, and the number of defective beans in 300g samples is less than 3 in G1 grade, which is the highest grade of Indonesian raw beans. In the follow-up, defective beans will be manually selected for 3 times in strict accordance with the standard to ensure that the color, shape and size of Mantenin coffee beans are uniform.
