Vietnamese coffee: Vietnamese coffee, strong aroma, light sour taste, smooth and moist taste, slightly bitter in fragrance, rich aroma, refreshing and refreshing. The representative products are moossy coffee, Central Plains coffee (G7 coffee), Saigon coffee (SAGOCAFE) and Highland coffee. Vietnam's geographical location is very favorable for coffee cultivation. Southern Vietnam has a hot and humid tropical climate, which is suitable for growing ROBUSTA coffee, while the north is suitable for growing ARABICA coffee. Each coffee bean used in the current production of Saigon Coffee is selected from the best coffee area in the Vietnamese plateau and is roasted with special cream, with outstanding milky aroma, mellow coffee flavor and unique flavor of Saigon coffee with a long aftertaste.

Coffee lovers, there may be such a situation, when the familiar utensils brew too much, drink too much, will inevitably produce a little tired, eager to find new interesting utensils to play with. In fact, productivity and creativity are highly developed, there are many appliances for enthusiasts to choose from, each kind of coffee tastes different, of course, the difficulty of operation is not the same.

Making coffee is one of the most attractive things about fine coffee. You can adjust flexibly to find out your favorite flavor. Maybe the adjustment process will be discouraging and it may get worse and worse, but don't worry. We summarize some differences due to different brewing utensils and provide some tips for brewing.

First, filter type

1. V60

The structure named from the angle of 60 degrees is a very popular brewing utensil. The coffee produced has high flavor consistency and clean flavor characteristics, and it is easy to find out some parameters of brewing from the experiment, such as water temperature, grinding degree and the ratio of powder to water, etc.

Using the medium fine grinding scale, after steaming, the water is injected around the coffee powder bed in a concentric circle. You may want to try to brew it with drip water and inject a small amount of water in batches.

Reason for choosing V60: if you want coffee with a clean flavor, you also want to try to adjust the brewing parameters and be willing to accept the difficulty of brewing.

2. Kalita Wave

Kalita Wave is a hand-brewed coffee filter cup, similar to the V60, but with several key differences. First of all, the bottom of the filter cup is flat and has three small holes, which will affect the flow rate of the water, so that the water can stay at the bottom of the filter cup before flowing out of the filter cup, otherwise it will make the brewed coffee more stable and fault-tolerant. It is suggested that the cooking method is the same as the V60, and the suitable grinding degree is medium to fine.

Reason for choosing Kalita Wave: if you prefer a more fault-tolerant way of cooking, you can try this filter cup.

3. The Chemex

The Chemex filter cup is very attractive visually, and it is even on display in the Museum of Modern Art in New York. Unlike other hand-flushed filter cups, Chemex can brew up to eight cups at a time. The best thing is that it can filter coffee. Because it retains the oil in the coffee, the coffee will be more mellow. However, due to the deep V-shaped design of Chemex, it is difficult to maintain consistency in cooking. Unlike hand punching, the degree of grinding is recommended for medium and rough grinding.

Reason for choosing Chemex: you want coffee with a clean flavor, and you want to brew more than one person at a time, but consistent brewing results are not your top priority.

4. American coffee maker

In the past, people used to associate American coffee pots with coffee of poor quality, scorched taste and kept for hours. However, all this has changed, because there are many smart American coffee machines, which are easy to operate, and you can set the closest water temperature, simulate human hand flushing, control steaming time, and so on. Most importantly, you can even set changes in water temperature in response to controlled extraction.

In the past, it would be recommended to cook with the thickness of moderate grinding, but according to the model of pushing through the old and bringing forth the new, or according to the grinding thickness recommended by the machine.

The reason for choosing an American coffee maker: you want to brew stable coffee for many people at once, and you don't mind spending more money on this device, or sacrificing the fun of the hand-brewing process.

Second, immersion type

1. Smart filter cup

This device may look like a hand filter cup, but it actually combines filtration and soaking functions. There is a valve at the bottom of the filter cup, which can fully soak coffee powder and water to extract coffee. When soaking is stopped, the coffee liquid can be filtered by opening the valve. Moderate grinding is recommended.

The reason for choosing a smart filter cup: you want to taste both soaked and filtered coffee at the same time, or you pay great attention to the stability of brewing.

two。 French pressure kettle

This is the most well-known and simplest brewing utensil, and the French kettle is often despised by people who drink fine coffee, but there are still many steps that can improve the flavor. The most important thing is to ensure that the coffee is poured out gently when the brewing is finished. if the action is too rude, the fine powder will be left in the coffee to continue extraction, and more bitter substances will be dissolved in the later stage of extraction, making the coffee worse. It is usually recommended to use rough grinding, but some people try to find a better balance between grinding and soaking time.

The reason for choosing a French filter pot: you want a full-bodied cup of coffee and prefer a simple brewing method.

3. Philharmonic pressure

The lightweight, portable and durable utensils invented by Aerobie have since become a favorite tool for people to travel, and they can quickly make a good cup of coffee whether they go up the mountain or down the sea.

Coffee made with Philharmonic pressure will have a full taste, but there is still a lot of room to play. Philadelphia is very easy for beginners to use, and it is one of the few cooking utensils that have their own world competition besides Italian coffee machines. It is usually divided into two cooking methods: reverse cooking and positive pressure cooking.

Inverted: reverse cooking method

1. Turn the cooking cylinder upside down and buckle the Philharmonic pressure seat to the cylinder. The bottom is about one centimeter away from the cylinder.

two。 Pour freshly ground coffee powder into the brewing seat and use fine or medium grinding depending on your preference.

3. Add water to steam the coffee powder.

4. Add the remaining boiling water at a time and stir (recommended).

5. After doing this, buckle the filter paper holder (washed filter paper) and press the Philharmonic on the cup to make the coffee.

Traditional: traditional barotropic method

1. Put the filter paper on the filter paper holder and wet the filter paper, then install the filter paper seat on the cooking seat, and place it on the cup when finished.

two。 Pour in freshly ground coffee powder and use fine or medium grinding depending on your preference.

3. Add water to steam the coffee powder. Add your water and allow the coffee to bloom.

4. Add the remaining water for cooking at one time

5. Stir

6. Insert the cylinder into the brewing seat about one centimeter and pull it up slightly to prevent the suction from flowing down.

7. When it's time to cook, you can press down the coffee liquid.

The reason for choosing Elle pressure: you can make coffee when you want to go out, or you want a cup of coffee that can be made simply and has a full taste.

III. Pressurization (concentration)

1. Household Italian coffee maker

For people who love espresso, only a few people have an espresso machine available at home, which is a heavy burden on the cost, whether it's the machine itself or the peripherals. The starting price of a household espresso machine is about 1000 yuan.

You can buy a portable or handheld coffee maker, which not only has fewer functions, but also produces poor coffee quality. however, they are still cheaper and can be used when you go out.

Of course, the brewing method of espresso is completely different from that of hand brewing or soaking: before putting the powder on the filter cup of brewing handle, the coffee powder must be ground very finely and brewed in a very short time after filling and pressing. It is very suitable for adjusting the brewing formula (depending on the quality of the machine).

Reason for choosing a coffee maker: you really love espresso and don't mind spending a lot of money on it.

two。 Mocha pot

Mocha pots are like French filter pots. People often react poorly to this traditional brewer, but like French filter pots, they can improve the quality of brewed coffee in some ways.

Put the finely ground coffee powder into the brewing seat and add water, and put the mocha pot on the heating stove. it is very simple. However, the coffee brewed from the traditional mocha pot can cause the bitter taste of the coffee. in order to avoid this situation, the water should be heated first. if the normal temperature water is used, it will cause the coffee powder to come into contact with the heated metal for too long.

The mocha pot is designed to be an espresso machine heated by a stove, but the mocha pot cannot create as much pressure as the coffee maker does, and pressure is important for espresso extraction.

The reason for choosing a mocha pot: you want coffee to taste like espresso rather than spend too much money on equipment.

4. Boiling type

1. Siphon kettle

If there's a brewing device that makes you look like a scientist when making coffee, it's a siphon pot. It combines soaking and filtration, including the principle of heating fire, glass brewer and science, and the coffee usually tastes full.

The reason for choosing a siphon pot: you don't want to have a troublesome production process, like a full and clean flavor, and want a full cooking process.

two。 Turkish kettle

This unique and historic brewing utensil, originated in Turkey during the Ottoman Empire, produced coffee with a bitter taste, a particularly elaborate brewing process with very fine grinding, and a special bean grinder to grind such fine powder.

You must buy a Turkish pot to make coffee, add water and sugar (sugar can be added or not) to the pot and put it on the stove or bury it in hot sand. Add the coffee powder when boiling, quickly remove the fire when it reaches the top of the pot, put it on the fire, repeat three movements and enjoy the coffee!

Brewed coffee will have a full taste, while the traditional practice is not to filter the coffee grounds, usually in front of guests or guests to show them. This coffee is also known as Turkish coffee.

The reason for choosing the Turkish pot: you want to experience the culture of the Turkish pot, and you like bitter or sweetened coffee, and you are not afraid of the trouble of brewing.
