The civet coffee, known as "Kopi Luwak", has been hyped by foreign media, with raw beans topping US $500 per kilogram (about NT $10, 5550). Xie Baoquan, vice president of Pingtung University of Science and Technology, led a research team by means of biotechnology. 16 bacteria, such as Lactobacillus, were removed from the civets' gastrointestinal tract and simulated the civets' digestive system in the laboratory for seven years. The civet coffee with a unique and charming flavor has been successfully developed, which is currently 4000 yuan per pound. After mass production in the future, it is expected to lower the price again, so that the civet coffee, which can be called "the most expensive in the world", is no longer unattainable.

Xie Baoquan points out that "wild Kopi Luwak" is the dream of many glutton, but the supply is scarce and the price is expensive, so it is very difficult for ordinary people to taste one mouthful, especially because many people have doubts about the hygienic quality of "cat poop." so I'm afraid to try it.

Xie Baoquan said that he and the team of the Applied Microbiology Department of the Department of Food Science went to Indonesia in person to isolate 136 strains from the gastrointestinal tract of local civets, and then found 16 strains with special aroma. Mantenin coffee beans for civets were strictly selected, and the aroma components were analyzed by biotechnology fermentation technology and gas chromatography, and the aroma components were analyzed continuously for 7 years. Finally, a biotech Kopi Luwak with 11 more aromas than the original civet coffee was developed, which is hygienic and healthy.

Biotech civet coffee is brewed after shallow culture, and the aroma of flowers and fruits is distributed immediately. After entering the throat, there will be aromas such as caramel, cinnamon, chocolate, etc., and the tail rhyme has a hint of flower and fruit acid, which is rich and layered. Xie Baoquan also pointed out that the fermentation time of biotech civet coffee is all controlled by the laboratory, with an average fermentation time of 16 to 24 hours. Not only the process is safe and hygienic, caffeine content is 36 mg per 100 ml. About half of the coffee sold on the market.

Dai Changxian, president of the University of screen Science and Technology, pointed out that many special coffee at home and abroad are made by feeding physical animals to eat coffee beans, in addition to low production, but also hygiene, inhumane and other issues. Last year, the school team successfully obtained the patent for biotech civet coffee. At present, in addition to providing students with part-time internship and selling coffee beans at the school gate, they are also actively negotiating technical transformation after mass production. It will make more people enjoy the noble and inexpensive Kopi Luwak.
