When the latitude decreases

Just as altitude affects temperature, so does latitude.

Take Colombia, for example, which is famous for its high-quality, high-altitude coffee beans. The farm area where coffee is grown, such as Narino Manor, which is 100 miles from the equator, is about 2300 feet above sea level, according to the Colombian Coffee Growers Federation, and its coffee beans are highly acidic, sweet and fragrant.

Serrado Mineiro, in southern Brazil, is 15 times as far from the equator as Narino, and we will find that these farms are much lower: only 8 to 1300 feet above sea level. According to the Association of Coffee producing areas in Brazil, the average temperature in the area is only 23 °C, making it an ideal coffee growing environment. Therefore, altitude is a relative concept, and it is impossible to set a unified reference standard for the producing areas of the world.

The Galapagos Islands straddles the equator and a coffee farm is located between 200 and 300 feet. However, the temperature is similar to that of Serrado Mineiro, where coffee is grown with caramel sweetness and moderate body as the Humboldt cold snap brings cold air from Chile and Peru.

Coffee trees grow more slowly at relatively low temperatures, and coffee cherries mature longer, which means coffee cherries have more time to develop more complex flavors.

At the same time, it also brings these shortcomings: the yield of coffee trees is low, more maintenance is needed, and the harvest is later. Coffee trees should not grow in places where the climate is too warm, nor should they grow in places where the climate is too cold.
