Remember in April when Qianjie Coffee wrote an article about storing coffee beans in the refrigerator and seeing how the flavor would change (link can be → [Front Street baristas's Note] what would happen to coffee flavor if you put the beans in the refrigerator? However, the beans used at that time were only stored for half a month, so this time Qianjie Coffee put the beans directly for four months to see what would change.

In this experiment, Qianjie coffee was sealed and stored at room temperature, frozen and refrigerated respectively, considering that some fans' homes will be stored in the form of coffee powder. So Qianjie coffee will be stored in the form of coffee powder and coffee beans this time.

Yejasuefei is a small town in Ethiopia with an elevation of 1700-2100 meters above sea level, which can be said to be one of the highest coffee producing areas in the world. In other words, the Yegashafi producing area originally belonged to the Sidamo producing area, but because of the unique flavor of the coffee produced here, it was separated out separately.

In order to reduce the influence on flavor caused by manipulation, Qianjie coffee decided to choose a smart filter cup for brewing in this experiment. The parameters are basically the same, the baking date is 2019.5.10, and the cooking date is 2019.9.11.

Parameters: water temperature 89 ℃, medium and fine grinding (BG 6T: Chinese standard No. 20 sieve pass rate 58%), powder / water ratio at 1:16, directly inject 240g hot water into coffee powder and filter out after soaking for 4 minutes.

| | Summary |

When coffee is stored in two forms at room temperature, cold storage and frozen environment, the flavor will be quite different:

The coffee powder that has been stored for 4 months, no matter which environment it is stored in, is weaker in aroma and flavor than coffee beans, and the flavor changes from the typical citrus and flower flavor of Yega to the flavor of nuts and chocolate.

Therefore, Qianjie coffee thinks that if there are conditions, it is better to store it in the form of beans. If you can't consume the coffee beans or coffee powder you bought so quickly, you can choose to store them in the freezer.

But here in the front street coffee, I would like to remind you:

When storing coffee beans or coffee powder in the refrigerator, be sure to seal them! Because coffee will absorb odor, if it is not sealed, it will easily make the coffee taste like that in the refrigerator.

And it is best to divide it into small packages for storage, so as to avoid the deterioration of coffee beans affected by water vapor due to repeated use.
