The amount of water injected can be seen by using an electronic scale, so that the water injection is no longer based on feeling, but the actual weight and water volume of coffee beans are maintained at the expected value (powder-to-water ratio).

In addition, friends who require more precision can weigh the powder instead of the beans, because the coffee beans that have been weighed may cause a slight weight error due to the residual powder in the bean grinder, which is said in advance as the coffee beans that need a little more powder, which can be weighed after grinding, and the possibility of error can be reduced to a minimum.

3. Filter cup

4. Hand punch pot

In addition, the difference of spout and the material of hand punch will affect the water output, flow speed, heat preservation, thermal conductivity and other factors. Use a proper hand pot to control the flow of water so that the water can be evenly mixed with coffee powder.

5. Thermometer / timer

Thermometer: if the hand pot does not have the function of temperature control, it is recommended to use an electronic thermometer in the water of the hand pot to watch the current water temperature. Water temperature is a major cause of coffee brewing. If the water temperature is too high, it may release the bitterness and astringency of coffee char. if the water temperature is too low, it will not show coffee flavor and insufficient extraction.

The whole thermometer can be immersed in ice water with ice cubes at least 2hammer.If it is shown as zero, the thermometer is accurate.

Timer: if the electronic scale does not have the timing function, it will need a timer to record each time point during cooking, including starting water injection, steaming, stirring time, falling time, stopping extraction time and so on. By now, all mobile phones should have a timing function. )

Step 1: prepare water

Water quality is very important, and it will affect the degree of extraction and the final taste of coffee.

Water temperature is also important: we recommend that the water temperature be between 82 °and 88 °.

Step 2: purify the filter paper and share the pot

No matter how "advanced" filter paper, always more or less with "miscellaneous smell", purification filter paper is a very important process of hand-brewing coffee.

Step 3: weighing beans and grinding [particle size suggestion is shown in the figure below]

The amount of coffee beans brewed by hand is 15-20g. According to the powder-to-water ratio at 1:15, you can get a pot of 225ml~300ml coffee.

If the bean is less than 15g, the requirement for water injection stability and water control ability is very high.

If it is higher than 20g beans, the stability and speed of water injection will also be higher.

Step 4: stew

Start injecting water from the middle of the coffee powder, as thin as possible, and make the transition from the center to the edge in about three laps to ensure that the coffee powder touches the water evenly, while avoiding water injection on the filter paper.

Step 5: three-stage extraction

The first stage of water injection: the first stage of water injection begins after stewing for 20 seconds. Add the stewed water to the 120ml, and the water injection in this section will be completed in about 30 seconds. Second stage water injection: the interval between the second stage water injection and the first stage water injection is about 10 seconds. Please start the second stage of water injection before the powder noodles do not collapse. Add stew and the amount of water in the first stage, the total amount is about 220ml, and this section is completed in about 30 seconds.

Start water injection from the center, slowly expand the water injection radius, the maximum outer diameter of water injection should always be kept at a distance above the filter paper 1cm.
