Although the hand coffee looks simple, if the control is good, you can definitely make a cup of professional and authentic coffee. I will briefly explain the steps and precautions of hand coffee with my own experience.
How to make coffee:
STEP1:
Weigh 15g of coffee beans, pour into the grinder, choose medium grinding, ground particles slightly coarser than salt.
STEP2:
Fold the filter paper into the cup.
Use the hot water in the hand rinse pot to evenly pour the filter paper for three purposes:
A: Make the filter paper and filter cup more closely attached to prevent channeling.
B: Remove the odor of filter paper.
C: The hot water will flow into the sharing pot, which will warm the sharing pot and make the coffee taste better.
STEP3:
Pour the hot water from the sharing pot into the prepared coffee cup to preheat it.
ps: All containers contacted by coffee liquid after extraction should be kept warm to ensure that the temperature of coffee is not lowered and the flavor is not affected.
STEP4:
Pour 15 grams of coffee powder into the middle of the filter paper and shake the filter cup horizontally so that the coffee powder in the filter paper can be smoothed out.
STEP5:
Put the flat filter cup back on the sharing pot, and then use the hot water in the pot to draw circles clockwise around the center of the filter cup. Add 30g of water 15 seconds after the start of brewing, then stop water injection and let stand for 25-35 seconds (PS: This step is called steaming)
STEP6:
After observing that no bubbles emerge, start the second injection. When injecting water for the second time, as before, draw a circle clockwise around the center of the filter cup. The water flow should not rush to the part where the coffee powder is connected with the filter paper, so as to avoid channel effect. When injecting water, the outermost circle should be about 1cm away from the filter paper, and then draw a circle inward in a circle.
STEP7:
Pay attention to control the water flow speed, about 2 minutes, to fill 230g-240g, hand brewed coffee is completed, when all coffee liquid bottom filtration is over, you can get a pot of fragrant coffee.
