Qianjie Coffee introduction-Guatemalan Coffee

Guatemala is a country of volcanoes, and the best cities are similar to the third-and fourth-tier cities in mainland China. The capital was originally located in the ancient city of Antigua, but was forced to relocate to Guatemala City due to volcanic eruptions.

In the famous Vivette South fruit producing area, coffee is grown on very steep mountains. Some coffee forests, even if they stand on mountain hikes, find it difficult to gain a foothold, and you can imagine how hard it is for working coffee farmers. In fact, the biggest feeling of this trip to Guatemala is to experience the hard work of coffee farmers. I feel ashamed and uneasy when I think that the coffee I usually drink is so difficult to grow.

Antigua, by contrast, is much flatter, and the whole of Antigua is like a plain between two mountains. On the way to Antigua, there are private houses on both sides of the four-lane asphalt road, with beautifully decorated facades and a large number of coffee trees in the yard. 80% of the coffee in Antigua is grown in an environment like this. Although it is not as steep as Wei Wei, it is also about 1500 above sea level, which meets the altitude conditions of coffee cultivation, and the quality is indeed good.

According to altitude, there are three main areas of coffee production in Guatemala, which affects the quality and flavor of each cup. The first is a low band (760m-1070 m), with high growth rate, low acidity and soft taste. The second is the middle area (1070-1200 m), with average acidity and taste. Finally, there is the height area (1300-2000 meters), with high acidity and rich flavor.

Despite the country's income, the national consumption rate is still very low. Therefore, the best way is to export coffee beans. Over the years, natural rainforests have been reduced by the development of cities, livestock and coffee. In fact, coffee plantations are considered to be the main artificial oasis in Central America, where forests full of coffee plants and shade trees are sources of oxygen. There are huge potential risks due to climate change; remaining animals and migratory birds use the plantation as a substitute for the former rainforest, but new germs can attack the plantation in a short period of time and destroy this last oasis.

Guatemalan coffee is not only smooth and hard, rich in taste, balanced acidity, sweetness closer to chocolate, sometimes unique producing areas with a hint of smoke, but also emphasizes its deep melancholy and mystery.
