The coffee fields of Central America (North America) are still dominated by the offspring of varieties first bred in the 19th century. The long history of coffee production and the mature coffee farming tradition that can be traced back to generations are still evident here, and some of the farms we work with were first established more than a century ago. Many things have changed since then, but the echoes of that era are still there today. The three largest producers in this group-Mexico, Guatemala and Honduras-have very unique individual planting areas because of their vast land area and changeable topography. El Salvador is the only country in America that mainly produces ancestral bourbon.
