Flat white, also known as Australian White Coffee / Furui White Coffee, is one of the most popular Italian milk cafes in Australia. In recent years, it has become one of the most popular coffee products in domestic coffee shops, and it can be seen in almost all cafes, large and small.

Although this coffee is called Australia White by coffee fans in China, it is still controversial about its place of origin, New Zealand and Australia. The reason is that the coffee culture of Australia / New Zealand flourished in Xintiandi after it was brought in by Italian immigrants.

The 1980s was the incubation period of Flat White, and as the culture of espresso took root, lattes were certainly as common as cappuccinos, but New Zealand coffee fans who drank more and more began to pursue that milk bubbles should not have as high peaks as cappuccinos or too many bubbles like lattes.

So Flat White in New Australia, which is rich in milk resources, with the excellent steaming skills of baristas, has developed a finer micro-foam than lattes and cappuccinos, so that fine hot steamed milk can be safely laid flat on the coffee, which is the starting point of Flat White. However, as for those from Australia or New Zealand, each has its own support, and we, who do not have time to join their past, are temporarily recognized as New Zealand and Australia.

So the "O" in Australian white coffee actually refers to New Zealand and Australia. No matter which region it comes from, it is certain that Australian White Coffee has a stronger coffee flavor than cappuccino and latte, while the fine milk foam adds a velvety silky taste to the coffee.

Qianjie Coffee produces Australian white coffee every day, using a 200ml cup, add two espresso (40g), then heat the milk and beat out a thick 0.5cm foam, then inject into the center to retain the fat layer of the espresso and increase the richness of the first sip of coffee.

Lattes, on the other hand, are made from 300ml cups, add two espresso (40g), then heat the milk, whisk the 1cm thick foam, and then blend evenly with the coffee to make various patterns.

Coffee shops produce espresso, usually using a special espresso machine to allow hot water of about 94 degrees Celsius to pass through the very fine ground coffee powder through a 9-10bar pressurization, and then extract espresso in the 1:2 powder ratio.

If you make Australian white coffee at home, you can use a household espresso machine / portable hand-pressed espresso. But the concentration of espresso without commercial coffee machine is high, and the stability of coffee quality is low.

Use a portable hand-pressed coffee machine (a demonstration of Qianjie Coffee using Stargrain Coffee Machine) to make espresso. Qianjie Coffee is recommended to use 18g ultra-fine ground coffee powder, then add 120ml, 95 degrees Celsius human water, directly press the 40ml coffee liquid and stop.

Then heat the milk to 55-65 degrees Celsius and put it into the milk tank, then use a hand-held foam dispenser to dispense the foam, and then use a spoon to remove the surface of the foam, which has reduced the thickness of the foam to 0.5cm, shake the tank to allow the foam to blend with the milk, and finally pour the milk in the espresso center, the finished product is about 200ml.
