Many friends on the question of how to preserve coffee beans, often very confused, beans can not be finished, how to do? Put it in the refrigerator? Put a sealed can? Vacuum bag? We generally recommend using a sealed bag to put the greenhouse is basically OK, normally freshly roasted coffee beans can be kept at room temperature for a month. The change in the taste of coffee during this month is worth pondering, and this month is also the best time for a bag of beans to taste. In fact, on the first day of baking, if you pay attention to it carefully, you will find that it is similar to the smell of grass, which is rather heavy, as if the taste has been "stuffy". After two days, you smell it again. At this time, the sweet smell of beans is very active. When the beans are placed for a week, their sweet smell reaches its peak, and then it will slowly fade.

On the whole, the personality of coffee beans will be very obvious and active in the first few days. After about a week, its personality becomes docile. Some people insist on tasting coffee a few days ago. Others like to taste the gentle side of coffee beans at room temperature for a week.

If you can finish your coffee beans within two weeks after baking, it is recommended to keep it at room temperature, so that the same bag of beans can feel its various changes in flavor and increase the ability of experience to judge the freshness of coffee beans. we all know that the low temperature in the refrigerator can slow down the deterioration of food and is a good storage place, so it is natural to think that coffee can also be put into the refrigerator to preserve its freshness. However, the air in the refrigerator is cold and dry, which is easy to evaporate the moisture in the beans, resulting in the loss of fragrance, coupled with the fact that there are too many miscellaneous smells in the refrigerator, whether refrigerated or frozen, another reason is that when you take coffee beans out of the relatively low temperature refrigerator, the room temperature is different from the temperature in the bag, the moisture will attach to the surface of the bag, and when it is opened, the moisture will enter again, and put it back into the refrigerator. Wet coffee beans are more likely to get moldy, so preserving coffee beans is generally not recommended.

Therefore, in general, it is recommended to keep it at room temperature (room temperature), not in the refrigerator. Many friends, especially those who have just come into contact with the original coffee, buy coffee powder directly, and most of them can't drink it all at once.

In fact, this is very fatal to the coffee flavor damage, not to mention whether the coffee beans are freshly roasted or not, even after they are freshly baked and ground into powder, they will be oxidized very quickly due to a substantial increase in their contact surface with the air. the freshness of coffee will be lost immediately, and the original mellow flavor of coffee will gradually disappear.

Freshly baked coffee beans are ground into powder, and the flavor changes within two or three days. So, if you are not just for a caffeinated drink, but also want to taste beans from each region, it is recommended that you do not buy coffee powder directly unless you consume it quickly within a week. Buy coffee beans and a bean grinder and grind the beans before brewing.

Speaking of which, by the way, there are four common types of packaging on the market:

1. Flexible non-airtight packaging: this is the most economical packaging. It is usually used by small local bakeries because they can guarantee a quick supply. Coffee beans can be consumed in time. Coffee beans packaged in this way can only be preserved for a short time.

2. Airtight packaging: after filling the coffee, vacuum and seal it. Due to the formation of carbon dioxide in the roasting process, this packaging can only be packaged after the coffee has been degassed for a period of time, so there is a storage interval of several days. Coffee beans last longer than powdered coffee. Because the storage period does not need to be separated from the air, so the cost is low. The coffee in this packing should be used up within 10 weeks.

3. One-way exhaust valve packaging: roasted coffee is placed in a special one-way exhaust valve. This exhaust valve allows the gas to go out, but not in. There is no need for separate storage stage, but due to the outgassing process, the aroma will be a little lost. It avoids the formation of rotten smell, but can not stop the loss of aroma.

4. Pressurized packaging: this is the most expensive way, but it can preserve coffee for as long as two years. After roasting for a few minutes, the coffee can be packed in a vacuum. After adding some inert gas, keep the appropriate pressure in the package. The coffee beans are preserved under pressure, making the aroma flow on the fat, thus improving the aroma of the beverage.

In our front street coffee, the baked beans are packed with an one-way exhaust valve, which mainly serves two points: one is to exhaust, and the other is to isolate the air from outside the bag.

In general, carbon dioxide and other volatile gases account for 2% of the weight of the whole coffee bean after baking. 2% of the gas will be slowly released from the fiber structure of the beans, and the release time will be related to the way it is baked.

Coffee beans release carbon dioxide in a bag containing an one-way valve. when the air pressure in the bag reaches a certain threshold, the valve of the one-way exhaust valve opens and releases the gas in the bag until the pressure drops below the threshold of the one-way valve. The valve of the one-way valve is closed and the bag returns to the sealed state.
