This coffee is treated in a typical Colombian all-water way. When cherries are screened for floating beans, peeled and fleshed, cement tanks are used to ferment shell beans and remove residual pectin for 24-36 hours. After fermentation, it will be dried in a UV-resistant plastic shed for 15 days.
