Friends who have not tasted Panama's rosy summer before may be amazed by the rich scent of flowers and sweet and sour juice for the first time. There is such a heavenly taste in the world. Some friends who only hear the name of "Rose Summer" but don't know the information behind it will get excited the next time they go to another cafe to see the word "red sign", but it doesn't taste like that at all.
It is well known that the rose summer coffee variety originated in Ethiopia. In 1931, an ambassador from the United Kingdom recorded the rose summer coffee variety during an inspection in Ethiopia, which was also the first time that the rose summer coffee variety had been documented. Later, the variety was picked and sent to coffee institutes in Kenya and Tanzania for research. After several twists and turns, the rose coffee variety was spread to the CATIE Agricultural Research Center in Costa Rica, numbered T2722.
Because of the resistance of rose coffee varieties to coffee leaf rust, some farmers have obtained rose seeds from CATIE. Among them, a landowner named Don Pachi introduced the rose coffee varieties in the 1960s and shared different coffee varieties with other coffee ranchers in Panama. Since many estates do not make special details when growing coffee, many estates only find that low-altitude coffee tastes better than high-altitude coffee, but they do not find that it is because of the variety of coffee. It was not until years later that the Emerald Manor won the championship that woke them up overnight.
In order to improve the coffee quality of the manor, the Emerald Manor in Panama buys many different varieties of coffee seeds from CATIE of Costa Rica to grow in its own manor. through record comparison, it is found that the performance of Rosa Variety is amazing. The traditional Central American coffee flavor is mainly nutty, soft fruit acid and caramel sweetness, while the rose summer coffee tastes like white flowers and rich fruit flavor.
Daniel, the owner of the Emerald Manor, followed the advice of the industry leaders at that time and sent a washed rose summer coffee bean from the Mario plot to participate in the BOP contest in 2004, which won the championship of that year, broke the auction price of the raw coffee beans that year, and washed the humiliation of being at the bottom of the BOP contest at the end of the last century.

Although the rose summer variety is also grown in the rose summer village, it has been scientifically proved that there is a great genetic difference between the rose summer in the village and the rose in Panama, which also means that the flavor tone is very different.

Such a unique natural climate, coupled with the higher altitude terrain, has created a heavenly coffee flavor.
As mentioned in the front street, the Panamanian Emerald Manor is the discoverer of Rose Summer flavor and the promoter of Rose Summer Coffee. Of course, there is an area on the bean list of Qianjie coffee. Friends who are familiar with the jadeite manor should know that the rosy summer brand of the jadeite manor was originally divided into red mark, green mark and blue mark. In 2021, in order to maintain the brand image, the Jade Manor cancelled the blue standard brand, and the Rosa branch has only red and green marks.
Among them, Red Standard, as the most important Emerald Manor Rosa coffee brand, chooses more than 1600 meters of Rosa coffee beans. In addition, it needs a cup test score of more than 90 points. When baking this coffee bean, Qianjie Coffee uses medium-light roasting in order to highlight its flower and fruit aroma and full juicy feeling as much as possible. When brewing, Qianjie recommends using 1:16 powder water ratio, slightly open the feng shui ratio, you can taste the flowers more clearly, the flavor will not be too concentrated, and the sour taste will be softer.

Grinding degree: the pass rate of Chinese standard No. 20 screen is 80%.
Inject 30 grams of hot water and steam for 30 seconds, inject fine water from the central point and slowly circle to 140 grams. When the water level in the filter cup is about to reveal the powder bed, continue to inject water around 240 grams, the total extraction time is about 2 minutes.
Even if Qianjie delivers freshly roasted coffee beans within 5 days, after 4 to 7 days of cultivation, Qianjie recommends a steaming step when brewing, because the carbon dioxide in the coffee beans prevents hot water from entering the internal structure of the coffee to dissolve flavor substances. Therefore, it is suggested that steaming can promote the exhaust of coffee powder and provide more stable conditions for later flavor extraction.
Qianjie coffee brewed through the above parameters of the Emerald Manor Red Standard Rose Summer has a berry-like sweet and sour feeling, with obvious white flower aroma, honey-like sweetness, clean and bright taste.
If you are using a pressure kettle to brew, Qianjie recommends that the grinding degree use the Chinese standard 20 sieve pass rate of 75%, powder-water ratio of 1:15, soaking time of 4 minutes, water temperature of 90 degrees Celsius.
First preheat the kettle and pour out the hot water, then pour 15 grams of coffee powder into the kettle, and pour 225 grams of hot water to cover. At the end of 4 minutes, gently press down to the 1/4 position of the pot body, pour out the coffee liquid and enjoy.
