In October 2015, the "beans of the month" from the Acatenango Valley of Guatemala tasted mellow and exuded a delightful sweet smell, forming a unique taste.
Founded in 1902, St. Philippa Manor is one of the most respected farms in the world. Owned by the Menezes family for four generations and currently managed by brothers Antonio and Anabella, St. Philippa has grown into a microcosm of miniature plot production culture and coffee craftsmanship culture.
Located in the Acatenango Valley at 1520-1900 meters above sea level, Santa Felisa Manor Coffee has an incredibly unique profile, which is characterized by the microclimate of the Acatenango Valley, creating ideal conditions for coffee cultivation. This warm, high-altitude weather makes coffee beans ripen very slowly, perfectly absorbing nutrients from volcanic soil.
Constantly experimenting with new treatment methods, full cleaning from San Felicia real estate provides a very clean image with amazing clarity, vitality and balance. Ripe cherries are picked, sorted, and sent to dry. The cherries are then dried or placed on a raised seedbed to generate greater airflow during the drying process and prevent excessive fermentation.
Guatemalan coffee is regarded as one of the most delicious and delicate coffee in the world. It is so unique because of its high altitude, different microclimates, consistent rainfall patterns, and excellent planting and processing to produce different types of Guatemalan Arabica coffee.
The coffee at Santa Felisa Estate in Guatemala is uniquely mellow, with taffy and milk chocolate flavors, as well as silky, velvety vanilla, giving a sense of harmony.
