Originally part of the Waka Cooperative of the YCFCU of the Yega Snow Coffee Union, the Gottingtin Cooperative became independent in 2012 and now has more than 300 smallholder members. At the end of December 2017, we visited the Guodingding Cooperative for the first time, and the reception manager YCFCU told us that Yuanshi was the first Taiwanese raw bean merchant to visit, and we were very excited and honored to visit there. It is about an eight-hour drive from AddisAbaba, the capital of Ethiopia, to the Gottintin Cooperative, southeast of Yega Chefe. About half of the road is unbuilt, making the road bumpy and difficult, and when you enter the Yega Chefe producing area, there is a strong smell of fermented peel in the air, indicating that there are processing plants or cooperatives nearby.

Upon arriving at the Guodingding Cooperative, I saw a steady stream of farmers nearby bringing in ripe berries, some on foot, some on donkeys or motorcycles, and they were very busy. Workers spread the incoming berries directly on African scaffolding and bask in the sun for 2-3 weeks, carefully pick out immature berries and rely on experienced workers to stir them regularly to ensure the quality of raw beans, and then remove the flesh and pods (sheep skin). Store in the warehouse until the moisture content drops to 11-12% before export.

Flavor characteristics
