Introduction to Qianjie-Guatemala grading
Guatemala is located in Central America, a country with year-round rainforest weather, high humidity and warm climate. Guatemala has formed a volcanic arc in Central America with Nicaragua, El Salvador, Honduras, Costa Rica and Panama. Because Guatemala is a high-altitude volcanic terrain, with the background of natural disasters, but also has a fertile soil, these conditions happen to be an ideal place to grow coffee.
Guatemala is located in the tropics, with many volcanoes. The northern and eastern coastal plains have a tropical rain forest climate, while the southern mountains have a subtropical climate. The year is divided into two dry and wet seasons, with wet seasons from May to October and dry seasons from November to April. The annual precipitation is 2000-3000 mm in the northeast and 500-1000 mm in the south.
Coffee was really introduced into Guatemala in 1750 by Father Jesuit, and the coffee industry was developed by German colonists at the end of the 19th century. Today, most of the coffee industry's production takes place in the south of the country. There are seven major coffee producing areas in Guatemala, and the flavor of coffee produced in each area is different, but to sum up, Guatemalan coffee shows a mild and mellow overall texture, elegant aroma, and special and pleasant acidity similar to fruit acid, becoming the aristocrat of coffee, among which Antigua Classic Coffee (AntiguaClassic) is highly recommended by global coffee connoisseurs.
Guatemalan coffee beans belong to bourbon coffee beans, is one of the more sour varieties, taste mellow and slightly wild, Guatemalan coffee aroma, liberating all forms, hearts and national boundaries. Through coffee, the mood leaves the country at any time and lands in a strange country half a world away, about its native land, harvest age, baking and grinding methods, that is, coffee life-long travel. Guatemala's fertile volcanic soil gives birth to a unique flavor of boutique coffee beans: Antigua coffee. The charm of Antigua lies in its balanced and refreshing acidity, rich spice and unique smoky taste, as if to tell us about the desolate history of Antigua in Guatemala.
Guatemala grading standard is mainly because the quality of coffee produced at high altitude is generally higher than that at low altitude, because high altitude and low temperature, slow coffee production is conducive to the accumulation of good substances. And the raw beans with high maturity have good expansibility when baking, which is beneficial to baking, and the quality is more stable.
At present, the coffee producers using this classification standard are Central and South American countries such as Guatemala, Mexico, Honduras, El Salvador and so on. Take Guatemala as an example, the most advanced coffee is called SHB (short for Strictly HardBean) very hard beans, which is grown at an altitude above 1350m, followed by HB (HardBean) hard beans, planted at 1200m--1400m above sea level, SH (Semi HardBean) slightly hard beans, EPW (Extra Prime Washed) super quality water washed beans, PW (Prime Washed) high quality water washed beans, EGW (Extra Good Washed) special quality water washed beans, GW (Good Washed) good quality water washed beans, respectively, at an altitude of 1200m.
