Qianjie-introduction to Helena Yegashifi, Ethiopia
Sun drying is the most primitive way for Essex to handle coffee. After the cherry fruit is harvested, the skin and flesh of the fruit is not removed, and the whole fruit is dried in the sun. Helena learned the skills from her father, very slow sun drying, the result is very sweet and rich coffee. The rigorous production process and quality control also make her sun flavor extremely clean. The elegant fragrance of the flowers comes from the extremely high altitude, and the cherries ripen slowly in the cold temperature environment.
Heleanna Georgalis, who is not a coffee farmer herself, owns a raw bean export company and a washing plant in the Yegashafi area, which handles ripe cherries bought by farmers around Yegashafi. This coffee comes from Hafursa and Wogida, and even as far away as Idida, drying the cherries in an elevated shed bed, which is very slow, but must be very precise. This is what Helena learned from her father, Yanni Georgalis.
Yanni Georgalis founded Moplaco in 1972 as a third-generation coffee exporter. Jani is highly respected both in Ethiopia and internationally, not only for the quality of his coffee, but also for his integrity in business. After her father's death, Helena not only bravely maintained her father's legacy of Moplaco, but also figured out her own way. Ethiopia's overall coffee production environment and bidding system are extremely complex and difficult, but under her leadership, Moplaco continues to produce high-quality coffee.
Helena was born in eastern Hara. As a young girl, she fled her home because of the civil war, grew up and educated in Europe, and established a very successful financial career. She never thought that she would one day inherit her father's career in Ethiopia and enter the field of boutique coffee. In 2008, when his father died suddenly, Helena was faced with a difficult choice, either to inherit her father's career, to learn coffee from scratch, or to continue her successful financial career. At last she chose coffee.
In order to inherit the family business, she buried herself in coffee, learning roasting, cup testing, planting, tanning, and the global boutique coffee market, even though she often encountered bottlenecks, but she still fully mastered the new trends in coffee cultivation and processing, experimented, traveled around the world, and consulted the best coffee farmers and coffee researchers.
