Specific treatment method: after harvest, the coffee cherry is exposed to the sun for 3 to 4 weeks and is turned several times a day to make it heated evenly. The dried coffee cherry fruit will be separated from the exocarp. After drying to 9% of the water content, the exocarp and silver peel will be removed thoroughly with a sheller.

Washing method

Technology invented by the Dutch in the 18th century AD. Washed beans currently account for about 70% of the total coffee, suitable for rainy areas. The coffee treated by water washing has bright taste, strong sour taste and less impurities. Specific treatment method: first, add a lot of water to the coffee cherry, rinse away the fruit impurities, and select beans. Then use a peeling machine to remove the exocarp and pulp. Then ferment for 18 to 36 hours, use fermentative bacteria to dissolve the pectin that is originally insoluble in water, and then wash it clean. Finally, dry in the sun to 9% of the water content, and remove the silver skin with a sheller.
