Those who like Blue Mountain Coffee are all conquered by the mellow taste and pleasant aroma of Blue Mountain Coffee. Therefore, many people will choose

The highest elevation in the middle of the Jamaica Blue Mountains is 2256 meters, of which the area above 1700 meters above sea level is a natural ecological reserve, which stipulates that coffee cannot be grown.

Before talking about Blue Mountain Coffee beans, Qianjie Coffee decided to knock on the blackboard:

Coffee between 910 and 1700 meters above sea level is called Jamaican Blue Mountain coffee beans.

460 meters to 910 meters above sea level, called Jamaican alpine coffee beans

Below 460 meters above sea level, it is called the preferred coffee bean in Jamaica.

The Blue Mountains are surrounded by the Caribbean Sea. Whenever the weather is clear, the sun shines directly on the blue sea, and the peaks reflect the bright blue light of the sea, hence the name. Therefore, Blue Mountain Coffee can always maintain a single and excellent variety of coffee, ensuring its clean and delicious flavor.

The highest peak of the Blue Mountains, which is 2256 meters above sea level, is the highest peak in the Caribbean and a famous tourist attraction. Located in the coffee belt, with fertile volcanic soil, fresh air, no pollution, humid climate, foggy and rainy all the year round, with an average precipitation of 1980 mm and a temperature of about 27 degrees, the climate is very suitable for the growth of iron pickup coffee.

Real Jamaican blue mountain coffee beans can only be grown in designated blue mountain areas. In Kingston, Jamaica is in the eastern north of the island, the ridge across Yatouga extends to the eastern part of the island, and the Blue Mountains are more than 2100 meters high.

Of course, you will also see blue mountain coffee beans grown from other coffee-producing countries. Don't worry, they also grow coffee beans from the Blue Mountain Coffee, which is actually introduced from the Blue Mountain region of Jamaica. Over time, the reproduction of coffee trees will change in order to adapt to the environment. For example, the same iron pickup, the Sumatran iron pickup coffee and the blue mountain iron pickup coffee will be slightly different in shape.

The Blue Mountain Mountains are located in the east of the island of Jamaica, and the geographical environment surrounded by the sea makes the species of iron pickup coffee very little affected by other coffee species, so the blue mountain coffee species still retains the flavor of the old iron pickup coffee species, coupled with the reputation of "blue mountain coffee", so when other countries introduce the blue mountain iron pickup coffee species, they will directly call it "blue mountain coffee species".

Introduction to Qianjie Coffee Clifton Manor in the Blue Mountains of Jamaica

The Jamaican Blue Mountain coffee beans of the front street coffee are from Clifton Manor.

Clifton is the oldest coffee producer still in operation in Jamaica, and it is the only estate in Jamaica with the symbol of "tropical rainforest".

As early as the mid-18th century (around 1750), Clifton Farm began to grow and produce coffee. Clifton Farm, which has developed to this day, is the largest estate in the region and is classified as "small-scale cultivation" by international standards.

Qianjie Coffee is here to knock on the blackboard:

According to the standard of CIB, the basic standard of NO.1 Lanshan No.1 coffee bean is beans with more than 17 mesh, defect rate less than 3%, moisture content about 13%, and so on.

Qianjie Coffee teaches people to identify real Blue Mountain coffee beans.

one. Designated export company by the Jamaican National Coffee Agency

Explanation: some of the authentic Lanshan No. 1 coffee beans in the Chinese market are mainly exported to China by Japan, Australia and Europe through direct branches. According to the International Coffee Association (ICO) in 2013, Japan accounted for 85% of the quota, while the United States, Europe and other countries each accounted for 5%. ICO statistics show that China accounts for 15% of the consumption of Blue Mountain Coffee. It is worth noting that most of the limited Blue Mountain No. 1 coffee beans are allocated to Japan, the United States and Europe. Among them, due to Japan's investment in the Jamaican coffee industry, most of the Blue Mountain coffee was bought out by Japan. In 1992, Jamaica sold 688 tons of Blue Mountain coffee beans to Japan, 75 tons to the United States and only 59 tons to Britain.

In addition, LOGO, officially registered by the Jamaica Coffee Bureau, is only used for certification testing of blue mountain coffee beans exported to Jamaica, and the BLUEMOUNTAINCOFFEE ®trademark is the mark of the outer packaging of authentic Jamaican blue mountain coffee beans.

Coffee Industry Committee (CIB)

two. The only producing area where raw beans are filled in buckets

So far, Blue Mountain Coffee beans are the only coffee producing areas that use buckets of raw beans, and other coffee producing areas use sacks.

three. A frog covered with a barrel at Clifton Manor

Clifton Manor is the oldest coffee farm in Jamaica, and only Clifton Farm in Jamaica has the "(RFA) rainforest water frog" logo.

Certification can be obtained only if it meets the Sustainable Agriculture system Standards, and the barrel has the mark of rainforest certification.

Jamaica Blue Mountain Coffee Bean treatment

Until 2019, Clifton Farm's Blue Mountain coffee beans were treated with water treatment.

Before processing, the workers will first remove the peel and pulp of the coffee beans and let them ferment naturally for 12 hours and 18 hours, then put the fermented beans into the pool and pass them back and forth, using the friction of the beans and the power of running water to wash the coffee beans until smooth and clean.

After washing, the coffee beans are still wrapped in the pericarp with a moisture content of 50%. At this time, the coffee beans must be dried so that the moisture content of the coffee beans is reduced to 12-14% (otherwise they will continue to be mellow, moldy and rotten). After that, the coffee beans are screened and stored in a special warehouse. The washing method ensures that the aroma of Blue Mountain Coffee is rich, the taste is balanced, and there is no outstanding or lacking essence of taste.

The reason why Blue Mountain Coffee beans are treated in the sun is more likely to follow the development of the market.

In 2019, Clifton Manor broke through the original inherent model and used sun treatment for the first time. Blue Mountain coffee beans were tested for sun treatment in 2019 and began to export small batches of sun blue mountain coffee beans for the first time in 2020.

However, for Qianjie coffee, the sun blue mountain coffee beans have changed the way coffee beans are treated, which is tantamount to changing the "inherent flavor structure" of blue mountain coffee beans. In fact, every time Qianjie Coffee introduces coffee beans to the producing area, it will first recommend the washed coffee beans, because the washing treatment can best represent the flavor of that coffee producing area.

The thought of brewing coffee beans on Qianjie Coffee, Jamaica Blue Mountain No.1

In the gouache ratio, the proportion of Qianjie coffee is 1:15, and the grindness is 75% of the standard sieve 20.

When brewing this Jamaican Blue Mountain No. 1 coffee bean, Qianjie Coffee hopes to highlight the mellow taste and soft acidity of the Blue Mountain coffee beans; the water temperature is 88 degrees. In the choice of filter cup, the first consideration is to use KONO filter cup, kalita ladder filter cup, flannel and other slower instruments.

Qianjie coffee about filter cups

The front street coffee brews and washes the Jamaican Blue Mountain No. 1 coffee beans, and the front street coffee uses a KONO filter cup.

Let's first look at the design of the KONO filter cup. The ribs of the KONO filter cup stop at half the height of the entire filter cup. The function of this design is to ensure that after the filter paper is wet in the filter cup, it can stick to the wall of the filter cup and achieve the purpose of limiting air flow. This increases the water absorption time of coffee powder particles, making the extracted coffee more uniform as a whole and effectively improving the mellow taste. In addition, the grooved frame under the filter cup is a key design to create a "siphon effect".

Qianjie Coffee uses the three-stage flow method when brewing Jamaican Blue Mountain coffee beans. This is a very simple hand brewing method. You can simply learn this hand flushing technique at home to make a simple and delicious cup of coffee.

The reason why the Qianjie coffee shop chose the KONO filter cup is its "ribs". The guide groove of the filter cup ribs extends to the bottom of the filter cup, the design distance of the filter cup ribs is very short from the bottom, and the bonding degree with the filter paper will be very high, so the flow rate of KONO is slower than that of V60.

The ribs will "eject" a small gap between the tapered filter cup and the filter paper, so that the coffee liquid can seep out of the filter paper, while there will be no coffee seeping out of the side of the filter cup.

The KONO filter cup selected by Qianjie Coffee has 12 ribs, which are designed to be much lower than the Hario V60, less than half the height of the filter cup.

It is worth noting that if the ribs are designed too short or too shallow, the range in which coffee can ooze becomes too small, and the extraction time will be lengthened; on the other hand, if the ribs are too long, the contact time between hot water and coffee powder will be too short. Coffee will seep out all of a sudden, and impurities floating out of the liquid surface will easily blend into the coffee. KONO cup divergent rib design and small aperture filter hole, so that the filter cup filtration speed is slower, reduce heat loss, extraction more uniform, combined with the above characteristics, Qianjie coffee in brewing gold Mantenin coffee beans, will use a thicker grinding degree, so that the coffee taste full-bodied at the same time, not because of slow filtration and over-extraction.

Suggestion on brewing coffee in Qianjie

Blue Mountain Coffee is an excellent and clean taste and is very suitable for hand brewing.

Amount of powder: 15g

Powder / water ratio: 1:15

Water temperature: 88 ℃

Grindability: the pass rate of No. 20 standard sieve is 75%.

Filter cup: KONO filter cup

The method of brewing coffee in the front street

30 grams of water is steamed for 30 seconds, and then 100 grams of water is slowly injected outward in the center of the small flow, that is, the electronic scale shows 130 grams. Then when the powder layer drops to 1 stroke, 65 grams of water is injected into 2 places, reaching a total of 195 grams of water. After all the coffee liquid of the filter cup flows into the next pot, remove the filter cup and end the extraction. The total cooking time is 1 minute 52 seconds.

Flavor: this punch shows the clean taste of Blue Mountain, chocolate and nut flavor, acidity, sweetness and bitterness reach a balance.
