Bolivian farmers mainly use water washing to process raw beans, and some occasional farmers also use daily or honey treatment.
Wash the coffee fruit with clean water, remove the immature fruit floating on the surface, separate most of the pulp from the coffee beans through the peeling machine, and guide the beans into a warm sink. After about 16 minutes of natural fermentation, remove the surface fruit before washing. Continue to expose that the water content will be reduced to 12% for 3 weeks, and then the water content will be reduced to 12%.
It is worth mentioning that since Bolivian is colder than other coffee-producing countries, many farmers use machines to dry rather than dry every day, so it does not taste like Japanese green beans, but shows sour fruit, slightly stronger taste and better flavor.
