When it comes to Alishan in Taiwan, people are most likely to think of the beautiful scenery and sunrise, and then they will think of the internationally famous Alishan alpine tea, which is a high-end product in some British shops.
But you know what? Alishan is also the vanguard of Taiwan's boutique coffee farm! About 20 years ago, a tea plantation was converted into a coffee orchard called "Zhuowushan Coffee Manor". With the help of Professor Wang Yuwen and some boutique coffee manufacturers, there was a planned development of variety improvement and scientific cultivation.
Zhuowushan boutique coffee farm comes from a tea farmer's family.
Xu Junrong, the owner of Zhuowushan Manor, was born into a family of tea farmers because he foresaw that the tea market was becoming saturated and thought that fine coffee would have a chance to develop a place in Taiwan in the future. At the same time, it was found that Alishan had a large temperature difference between day and night, and the altitude was high enough, so it had the opportunity to produce high-quality coffee full of sweet taste and sour quality, so I decided to put it into the production of fine coffee after careful consideration.

2010 Taiwan Coffee Evaluation Award
In 2011, the Agriculture and Food Administration ranked eighth in the evaluation of domestic boutique coffee beans.
In 2012, the first prize in the evaluation of domestic boutique coffee beans of the Agriculture and Food Department (runner-up)
The second prize for the evaluation of raw coffee beans in Taiwan in 2013 (runner-up)
What improvements and techniques have been read behind these awards?
Zhuowu Mountain Coffee Manor has made the coffee trees shorter!
In general, coffee trees do not grow densely, and it is not easy to harvest. In order to improve efficiency and make the fruit more fat, Zhuowu Mountain Manor cuts off the upward twigs every year, dwarfs the coffee tree, and only harvests the coffee cherries on the top ring branches of the coffee tree, and the rest of the coffee cherries are removed. This not only improves the efficiency of harvest, but also concentrates nutrients and makes the fruit fatter.
It is worth mentioning that Zhuowushan Coffee Manor uses organic farming from beginning to end, which is not only friendly to the land, but also reassuring to drinkers.
Unique boutique coffee treatment: Yexi treatment
Zhuowushan Manor put the coffee beans in Yexi for low-temperature water washing. Compared with the normal water washing method, the Ye Xi method rinsed coffee beans for 120 hours and 168 hours. After washing, the coffee beans were dried by sun treatment. This complicated process makes the coffee beans dry and mellow at the same time.
Scientific cultivation of a variety of coffee varieties
Taiwan has the world's top agricultural technology and often exports other countries to assist in agricultural development. In the field of coffee is no exception, working closely with Wang Yu-wen, a professor of agronomy at National Taiwan University, to scientifically grow purple leaves, geisha, and SL34. Different treatments are chosen according to the characteristics of different varieties, rather than convenient treatments based on weather in many countries, so they have an extraordinary level of quality.
