In 1980, their son Juan de la Cerda Colom started managing the farm and producing coffee there. Over the last eight years, they've evolved and changed significantly in how they handle coffee.

The farm where Maraka Tuna Coffee is housed in Solo Manor, Guatemala, was purchased by Dr. Mario de la Cerda and his wife Maria Colom in 1960. In 1980, their son, Mr. Juan de la Cerda Colom, began to manage the farm and produce coffee here. In the past eight years, they have made a very important evolution and transformation in the handling of coffee. The traditional process of fermentation with cold water is replaced by the use of warm water for fermentation.

Warm water fermentation allows coffee beans to maintain their density and ensure that the ingredients (sugars, oils, etc.) are not lost, while shortening the fermentation process. At high altitudes, even in warm weather, the water temperature is very low, and the low water temperature will slow down the fermentation process of coffee beans. When introducing water into the fermentation tank, Solo Manor uses solar panels to heat water before joining the green bean shopping group. The partner told us that she had never heard of this treatment before buying the beans.

The farm, once part of Guayaba Manor, was bought back by Dr, Mario de la Cerda and his wife Maria Colom de la Cerda in 1968. Since 1980, his son Juan de la Cerda Colom has been in charge of the farm, which is the fourth generation of the farm. Juan de la Cerda and his son Juan Diego currently run one of the best farms in Guatemala.

The success of Solo Manor is due to the strict control of the entire coffee production process, which has a consistent process from the beginning of planting management to harvest and post-harvest treatment. The farm uses an efficient ecological treatment plant to remove the peel of the coffee fruit by drying, then use the recycled water system to start the coffee treatment, then clean the coffee fruit with clean water, remove the residue, and then dry the coffee in the sun and greenhouse.
