When it comes to Sumatran manning coffee, it has low acidity and high concentration, grassy aroma, and has a rich and impressive taste. Friends who don't like sour taste are recommended to try. Qianjie has been a loyal fan of Manning Coffee since it opened its shop in Qianjie. At present, among the Mantenin beans on the shelves are Lin Dong Manning, Gold Manning, Tiger Manning and aged Mantenin. This time in Qianjie, let's talk about the difference between these four types of Manning, and let's take a look at the origin of the name.

Sumatra is the largest island in Indonesia, located above the equator, with a tropical rain forest climate, high temperature, humidity and abundant rainfall. Small coffee farmers usually grow in primitive mountains, and their water resources are very precious, so a unique "wet peeling" sectional drying method (Giling Basah, Wet hulling) has been developed here, which adds a different flavor to Sumatra coffee from other regions. Of the coffee beans produced in Indonesia, 25 per cent are Arabica and the remaining 75 per cent are Robusta, while fine Arabica coffee from northern Sumatra is sold on the market as Lintong and Mandheling.

The origin of Manning's name

Manning is not the name of the producing area, the place name, the port name, nor the name of the coffee breed. How did it get its name? In fact, it is a phonetic error of the mandheling people in Mandaining, Indonesia. During the Japanese occupation of Indonesia during World War II, a Japanese soldier drank mellow coffee in a cafe, so he asked the shopkeeper the name of the coffee, and the boss mistook him for asking where you were from, so he replied: Mandaining. After the war, the Japanese soldiers recalled the "manning" they had drunk in Indonesia. As a result, 15 tons of Indonesian coffee was transported to Japan, which was very popular. Mantenin's name came out in this way, and the owner who answered the Japanese soldier at that time was now the world-famous PWN coffee company. Manning, the popular gold of Front Street Coffee, is from PWN.

PWN Coffee Company

Founded in 1957, N.V. Pawani Medan (PWN) is the first Indonesian company to export coffee, rubber, cinnamon, cloves and patchouli oil. It is the first Indonesian company to export coffee from North Sumatra and the first company to make Manning Coffee famous in Japan. Since 1977, the company has focused on the export of premium coffee beans, Sumatran Arabica coffee Manning I and Robusta coffee AP-I II, mainly to Japan, Taiwan and the United States, of which Japan and Taiwan account for more than 95%. In Japan and Taiwan, "PWN" has become synonymous with "quality assurance". Pwangni Coffee Company holds the "Golden Golden Mandheling" trademark, so Japanese companies have to register the "Jinding Gold Top Mandheling" trademark separately.

Manning coffee treatment

Wet shaving (Wet-Hulling) is the traditional treatment of Indonesian Sumatran coffee, that is, when the raw beans are half-dried and the moisture content is as high as 30% to 50%, the seed shells are removed first, and then continue to be dried in order to solve the problem of drying for too long. As the drying time is shortened to two to four days, the fermentation period of coffee beans is shortened, and the acidity decreases a lot, but the relative thickness increases, with obvious aromas of caramel and fruit, even with aromas of herbs or grass and wood. this is the unique regional fragrance of Sumatra.

However, the effect of early removal of the seed shell is that the raw beans are half dry without the last two layers of protection (note: coffee beans' four layers of protection: pericarp, pectin, seed shell, silver skin), which is like taking off your clothes and basking in the sun. Although the wet planing method solves the problem of drying time, the relative probability of raw beans being contaminated by molds, fungi and yeasts is also greatly increased. Paradoxically, however, these factors have become the key factors in creating Manning's special aroma.

Another feature of the wet planing method is the increase in the probability of the so-called "sheep's hoof beans". Because the raw beans are planted with a shell planer in the semi-soft stage when they are still very wet, the fragile soft wet raw beans are very easily cracked, broken or scratched by mechanical force, resulting in the so-called sheep's foot beans and scratched beans, resulting in the deterioration of the selling phase of raw beans.

Four types of Manning Coffee on the Front Street

1. Golden Manning

Mantenin is the boutique of Indonesian coffee, while gold manning is the best boutique of Mantenin. Gold manning is a full-grained, clear and moist coffee carefully selected by hand, which is absolutely the most beautiful woman in the coffee. In fact, in order to improve the problem of Manning defective beans on the high side, the Japanese began to use carefully selected quality control a long time ago, after four manual selection to remove defective beans. Unfortunately, "golden mandheling", or gold manning, was registered as a trademark by the Indonesian coffee company Pawani, and gold manning became the exclusive property of PWN, and pwn was one of the first companies to sell Mantenin coffee beans to Japan. PWN is the real gold manning, the gold manning marked with PWN, the yellow man of pwn three times manual screening, one machine selection, the beans are very beautiful, on the other hand, very uniform, so that the roasted coffee will look cleaner. PWN has registered the gold manning as a trademark, which means that only the gold manning produced by PWN can be regarded as a real "golden manning". Gold manning is from Manning, which can be understood as selected mantenin, which is the reason why Qianjie coffee chooses to put it on the shelves. Qianjie coffee tests 300,500 groups of beans every year, among which 1/5 are the most representative beans with regional flavor. Golden manning is a masterpiece of this choice, and we think it is a good representative of Sumatran style.

two。 Lin Dong Mantening

Lake Toba is currently the largest and deepest volcanic lake in the world, with a depth of nearly 500 meters. The entire Lake Toba is 100 kilometers long and 30 kilometers wide, with a unique geographical environment above 900 meters above sea level. the mineral-rich soil left by the volcanic eruption makes the area of Lake Toba a perfect soil climate suitable for growing coffee. The hinterland of Lake Toba is extremely large. Most coffee trees grow on the undulating terrain and fern-covered plateau, and most of them are planted without shade. Coffee is produced here-that is, the main area of Mantenin, which is popular all over the world, is located in the forest east area southwest of Lake Toba. Until the 1990s, it was gradually planted in high altitude areas. The current well-known Lintong area has an average coffee planting height of between 1200 and 1500 meters in the production area. Coffee is planted by shade farmers under shade trees and exfoliates a peculiar flavor and a low and lively full-bodied flavor.

3. Tiger Manning

Coffee is the second largest cash export crop in Aceh. It is estimated that there are about 60000 small-scale coffee farmers, and each person owns about 1 Murray 2 hectares of coffee planting land. Indonesia's traditional way of coffee trade is multi-point supply, starting from farmers, through multi-layer middlemen, slowly accumulate a large number of export goods. In the Indonesian coffee trading system, the direct trade of receiving goods from farmers and arranging for export through a single window is quite rare in Indonesia.

The requirement of the Mantening tiger is that the taste will have the aroma of Chinese traditional Chinese medicine, and it can only be called a tiger if the defect rate of more than 17 eyes is less than 4%.

4. Old Manning

The so-called aged coffee beans (Aged bean) means that raw beans age naturally by prolonging their storage time (usually 2 to 3 years). These changes include decreased acidity, color changes and thickening of beans. The storage environment must be cool and ventilated. Because the storage environment is dark and for a long time, aged coffee is always difficult to get rid of complex flavors such as musty taste or commonly known as sacks or leather. The aged Agedmandheling is as sweet as honey. The successful old bean has worn away Manning's inelegant sour taste. The sour ingredients are ripe and converted to sugar, making the coffee more round and sweeter to drink.
