Is American black coffee?
We can probably think from the name that espresso should come from Italy, and the American style should come from the United States. The rise of American coffee began in the 18th century. At that time, Americans expressed great dissatisfaction with the high import tariffs imposed by the British government on tea, so the "Boston Tea pouring incident" broke out in 1773 and advocated switching to coffee. Gradually, the number of cafes in the United States continues to expand, prompting the coffee industry to flourish in the United States. By the 1880s, about 1 per cent of the world's coffee beans were sold to the United States. During World War II, American coalition forces consumed a lot of coffee every day to ease the monotony of life and boost the spirits of soldiers.
However, Italians are used to drinking espresso with a strong taste, and the US military is not used to such bitterness, so they dilute it with water to reach the concentration they accept. Later, in cafes opened in the United States, the Italians also "do as the Romans do" to launch "coffee with water" based on Italian concentration, which is very popular. Later, this "coffee with water" was called "American Americano". Because there were no other ingredients, only water and espresso were added, so it belonged to the type of black coffee.
What's the difference between American coffee and Australian black coffee?
In addition to American coffee, another Long Black is also beginning to be added to the menu by some coffee shops, which is translated as Australia black in China. In the 1980s, a large number of Italians emigrated to Australia and brought Italian coffee machines to New Zealand, Australia, Melbourne and other countries. Australians like coffee with a stronger taste, but it is obvious that refreshing American style is not their "dish". So the Italians make adjustments in the concentrated base and production ratio to cater to the "heavy taste" of the Australians. In Australia, people generally use Black Coffee to refer to black coffee and White Coffee to refer to coffee with milk. Long Black is the addition of a small amount of water to dilute the excessive concentration, highlighting the aroma characteristics of black coffee.
Qianjie looked through the relevant materials and noticed that the most obvious difference between American style and Long Black is the amount of water added. American coffee is first extracted from espresso and then diluted with water. The ratio of espresso to water is 1: 5: 1: 8. While the coffee flavor of Long Black is stronger and smaller than American coffee, the barista will extract two espresso (40g) into a cup containing 100-120ml water, retaining rich Crema on the liquid level. So Long Black is the most full-bodied and mellow when drinking the first sip, and the flavor behind it will be clearer and cleaner.
The proportion of American coffee
There is no specific standard for the ratio of coffee to water, which means that the American style made by each coffee shop may be different, which will be determined according to the taste characteristics and cup size of the coffee beans used. For example, the American coffee produced by Qianjie store uses sunflowers roasted by Qianjie to mix coffee beans. Ideally, it should have the flavor of wine, vanilla, cream, chocolate and berries. When making iced American coffee, you need to consider the effect of chilled coffee and the melting of ice cubes, so Qianjie will use strong ice cubes. Generally, the ice cubes will be taken out in advance, and then refrigerated and stored into "old ice". This may slow down the melting rate of ice cubes and better maintain the taste of iced coffee. The ice cubes in the front street weigh about 25g each, and the proportion of one cup of iced American coffee in the front street is 40g espresso, that is, adding 4 grams of ice cubes and 120g of water, that is, 1 rime 2.5 viz. This iced American coffee is not too strong and uncomfortable at first, nor is it too light due to the dilution of ice cubes.
