The autoclave is the principle of immersion and extraction. In the normal production of hot coffee with the same beans, the coffee produced by the kettle will be more balanced and thicker than that made by hand. Therefore, there is also a reference to the Japanese ice hand to make French pressure pot iced coffee. That is, use a small amount of hot water to soak the coffee, extract the rich hot coffee liquid, pour it into ice to dilute and cool, and form iced coffee.

Considering the need to add ice to dilute the concentration of coffee, it is not suitable to use shallow roasted coffee with high acidity to make iced coffee. One reason is that dilution will make the taste thinner. Another reason is that soaking lightly roasted coffee with acidity can easily lead to bad flavors such as almonds and peanut clothes. In the end, Qianjie decided to use Honduran sherry coffee beans, which is characterized by mellow taste and rich aroma of vanilla and sherry, which is very suitable for soaking and extraction.

Extraction scheme

In the ① preparation phase, prepare the kettle, electronic scale, glass, hot water and ice cubes. The amount of powder is 15 grams. In order to get a stronger hot coffee liquid, the ratio of coffee powder to hot water is 1:8 and the water temperature is 94 ℃. As for the degree of grinding, because the kettle is filtered with a metal filter, it is not recommended to improve the extraction rate by adjusting the degree of grinding. In the degree of grinding, use medium and rough grinding (the pass rate of No. 20 standard screen is 65%).

② grind coffee powder, pour into the kettle, inject 120g of hot water (and start timing), water injection directly into the center.
