When I was drinking tea in the teahouse, I was tasting the whole universe, and the moment I raised the cup to my lips was eternity beyond time and space.

When it comes to tea, do you think this is a bit of an exaggeration? Maybe. But then again, only tea can make people feel so deeply.

This is the characteristic of this humble drink. It takes you into a world of contemplation. It inspires you, makes you almost lost in thought, and brings you closer to a quieter and more peaceful world than we are.

You will ask, what is the sign of a good cup of tea? Considering the freshness, taste and skill, you will know. Most tea experts agree that you don't need to see the first time you make tea to know what a really good cup of tea feels like. It can turn the poor into aristocrats (so to speak). Our previous blog post talked about what is a tea maker and all kinds of tea makers.

In this special blog post, I will show you what spring tea is and what makes it so different from other teas.

Fresh, exquisite, incredible-- the first harvest in spring

The first scented tea is usually picked between March and May, just after winter and at the beginning of spring. In some countries, the tea picked in this season is also called spring tea or Easter spring tea. When plants wake up from dormancy after a long winter, it is the beginning of the first growing season, which leads to the first harvest and then the completion of the first flowering. Healthy tea trees are in full bloom, and tender green buds and leaves become vibrant under the feeding of melting snow and spring rain.

Light taste, refreshing taste

Each rinse has a unique cup-shaped feature. The subtle change from one refresh to another is obvious, which makes exploring each refresh more interesting.

As soon as winter is over, the first flush begins. As the tea has gone through the ripening period of the whole winter, the flavor of the tea is bright, but the color is light, it seems clear and the appearance is bright. The aroma of the first brewing tea is particularly fresh, green and mild floral.

Spring tea, a rare kind of tea

Now, tea pickers usually have a limited time frame, during which they have to pick all the tea. They do so periodically, and the number of cycles varies from region to region and season to season. At the beginning of spring tea, the seedlings will grow rapidly with the coming of spring. Due to the short time, only a limited amount of tea can be produced in spring.

Because of this, the demand for first-time tea in the market always exceeds its supply, making these teas the rarest and most expensive.

You can go to heaven in one cup-Darjeeling spring tea

Some of the most popular and expensive spring tea varieties come from Darjeeling, India. Jungpana, Rohini, Goomtee, Castleton and Makaibari are some of the very popular first batch of Darjeeling Tea producing areas.

Unlike summer-picked tea, Darjeeling spring tea is not famous for its musk deer flavor. They are typical floral / fruity, quite fragrant, well-textured, light, sweet tips near the end. They also taste very astringent. This taste goes well with richer foods, including soft cheese and egg-based dishes. It can even go with fruit and seafood.

Tea tips: after the first flush, there will be a short intermediate period that lasts about two weeks. After this period of time, June ushered in the second harvest.

So far, you have a good understanding of spring tea and the characteristics of these teas. As a rare and elegant variety, Chuchong tea is preferably natural, but additives such as lemon and honey can be used with these teas.
