How to correctly pick tea in the process of Sri Lankan black tea manor-what is three leaves\ two leaves with one heart?
Picking tea is the most important process in making black tea, and you can't make good black tea if you do it casually. Therefore, there is a fixed tea picking time in the tea garden, late or unauthorized rest will not be able to pick a predetermined area or a predetermined quantity. The rule is the most important.
I want to be on the side of tea pickers. The foreman always looked at others from a higher place with a large umbrella and sickle, and it was the tea pickers who picked tea with both hands.
All the tea pickers were carrying sticks about two meters long. At first glance, it looks like a walking stick, but it looks too thin and unreliable. In fact, this is put on the tea tree in front of you when picking tea, which is used to mark where to pick it.
The method of picking tea is very important, it should be picked according to one core, two leaves or three leaves.
The top of the stem is a bud, and there are two new leaves below, mostly 8cm to 10cm in length. Occasionally, when they grow to 14cm or 15cm, there will be one more big leaf, which is a core of clover.
The lowermost large leaf is called Mother Leaf, and there are 5 or 6 mm new buds near the root of the leaf near the stem. "Mother's leaf" is taken from the meaning of tending new buds.
Take off the mother's leaves, and then leave behind the long and big leaves. It is called Fish Leaf because it is shaped like a fish. There are also leaf buds next to the fish leaves. If you pick the tea as close to the leaf buds as possible, you can ensure that the nutrients rising along the leaf stems are sent to the buds to make them thrive. In Sri Lanka, it will be ready for picking again after about 20 days.
However, if you leave more than a few centimeters of the leaf stem with leaf buds, nutrients will be lost from the section of the stem. Leaf buds do not get enough nutrition and are stunted. It takes 30 to 40 days to grow, which takes twice as long as usual. At the same time, it is easy to turn into weak and tasteless leaves.
What is even more incredible is that tea trees, as the mother, will also become susceptible to disease and have a shorter life span.
The hands of tea pickers are very important. Depending on the picking method, black tea will taste good, the life span of tea trees will be extended, and new buds and leaves will grow well, and production will increase.
Not only that, tea pickers will remove bad stems, shafts and leaves when picking, and throw them on the ground, which is equivalent to pruning at the same time. Tea pickers keep putting the raw tea leaves into baskets or plastic bags on their backs until they are full. At this time, the weight of tea is about 7-8 kilograms.
Fill the bag repeatedly within a day and pick up at least 20 kilograms, otherwise you will be reprimanded by the foreman.
Songs and loud laughter could be heard in the tea garden, and the voice of the foreman's instructions echoed in the tea garden. There will be a rest about two hours after 9: 00 in the morning, and everyone can get warm black tea. Lunch will be their own bento, mostly banana skin-wrapped curry with black tea.
Black tea will be dispensed again at 3 o'clock and drink black tea while chewing white curry made from coconut or palm sugar boiled from palm tree flowers.
And the person who brews black tea is also the tea picker, who selects a person from a group who is specially responsible for making black tea instead of picking tea that day, and this person's salary will be collected by all the staff on that day.
The tea break in the tea garden is very joyful. Everyone hurried down the slope and asked people to pour black tea into the lid of the bento box, plastic cups and even aluminum cups.
At this time, the foreman will also pour black tea into the kettle and bring it to the tea pickers who can't get out of the tea garden.

According to the degree of fermentation, tea is divided into fermented tea, green tea, black tea and Pu'er tea.
Many kinds of tea come from the same plant Camellia. Different kinds of tea are the result of different tea-making processes. The degree of tea fermentation is one of the key steps in the process of making tea. It refers to how many enzymes are allowed to oxidize tea before drying. The oxidation process can be prevented by baking or steaming before the leaves are completely dry. After fermentation, the originally dark green leaves turned reddish brown.
