Variety and picking

In Darjeeling, the first red tide harvest began in February. From April to May, it is the rainy season. After the rainy season, the second red season is famous for its musk wine.

However, the cause of this musk deer fragrance has not been revealed. So far, it has been known that this small green fly is the source of the taste of this musk wine. This is the same mechanism as Taiwan's Oriental Beautiful Tea. When the rainy season is over, a large number of green flies get up from the ground and begin to suck the juice of tea leaves. Once attacked, the tea turns yellow and begins to produce some kind of antibiotics.

In scientific terms, this substance is called plant antitoxin. This substance produces a very fascinating taste of musk wine in tea.

From September to October, the number of tea pests decreased, and green flies had little effect on tea. In this season, tea mainly gives people a very sweet Darjeeling flavor.

The tea harvested from November to December is also called autumn tea, but its characteristics are very different from those harvested early.

From November to December, tea trees begin to produce very soft buds, just like early spring tea. From late autumn to winter, Rain Water is less, the weather is cold, and the growth environment of tea trees is very harsh.

The tea tree grows very slowly. As a result, tea is concentrated with more substances and becomes very sweet and fragrant. These characteristics are similar to those of winter tea in Taiwan.

There are several different cultivated varieties in Darjeeling. Assam varieties grow in low-lying tea gardens.

Assam varieties have strong astringency and lack of sweetness. Mainly used for tea bags and low-end tea production. The tea garden, which is located above 1000 meters above sea level, is a hybrid between China and Assam.

It is called a clonal variety. There are many Chinese varieties of tea gardens above 1000 meters above sea level, while almost all of the tea gardens above 1500 meters above sea level are Chinese varieties. Chinese varieties can only grow in cold weather.

It gives people a very sweet taste and subtle fragrance, especially in autumn.

Clonal varieties provide a very strong aroma, but weak in flavor and taste. It is a little astringent and not full-bodied.

Because of its characteristics, clones are sometimes used for mixing purposes to enhance the aroma of tea.
