Fenghuang Danzong tea is a kind of oolong tea from Guangdong Province in southern China. Each kind of tea has its own history and characteristics, but what is the special feature of Shan Cong? Let us tell you... First of all, what is oolong tea? First of all, a brief introduction to what is oolong tea. Many people only know green tea or black tea because they can be found everywhere in shops and supermarkets. However, oolong tea is another kind of tea, which, in the simplest terms, can be described as semi-oxidized tea between green tea and black tea. If the leaves of green tea are zero-oxidized, while black tea is 100% oxidized, depending on the type and origin of oolong tea, the oxidation level can be between 20-90%. This partial oxidation, coupled with several additional steps in the production process, forms one of the most complex teas in terms of depth and flavor.

What makes Dan Fong so special? In the world of oolong tea, there are four main types: Tieguanyin in southern Fujian, Wuyi oolong stone in northern Fujian, Taiwan oolong tea, and finally Dancong from Guangdong. What is special about Dan fir is that there are unique aroma varieties inside it. It is said that Dancong has at least 10 different aromatic varieties, each with its own unique taste and flavor. In general, all these subvarieties can be divided into three main categories-fruity, floral and herbaceous. We currently have magnolia, gardenia (or big five wild) and almond-scented sperm varieties, but there are others such as ginger, iris, jasmine, the list continues. But the point is, what makes all this so magical and special is that there are no artificial flavors, additives or essential oils to create these flavors. All these different tastes and varieties come directly from tea. One ingredient, no other additives. Yeah? So it's all the same, just different? I think it's a way of saying. The word "single fir" literally means "single stem". If you look at a real single fir tea tree, you will find that it is different from ordinary tea trees in that they are single trunks rather than long, interconnected tea bushes. The overall idea of Dancong tea is that all varieties come from a series of "mother trees". The mother tree variety is Phoenix Narcissus, or Water Elf / Narcissus Oolong. Most of the daffodil oolong tea sold on the market comes from Wuyi Mountain, Fujian Province. Although the name is the same, the taste of daffodil oolong tea in Chaozhou Fenghuang Mountain is very different. We will discuss this further in future comparative articles. So the story begins. Once upon a time, there were / there were a series of daffodils growing crazily everywhere. As these crops grow, are picked and made into some delicious tea, farmers begin to notice that some crops or batches seem to have developed a unique flavor. Then these farmers will graft from the best trees of the crops and plant them, until eventually, the outline of some flavor becomes more obvious. These flavors are named honey orchid, gardenia, almond fragrance and so on. More and more "new" aroma varieties have been discovered and cultivated, but how they are different from the existing varieties is still a debate. When we first tasted Danzong tea a few years ago, we were surprised by its taste and pleasant aftertaste. We noticed a lovely tea with fruit that tasted like litchi and a long aftertaste. What surprises us even more is that this kind of tea does not add any seasoning or essential oil. When we decided to go back to the source of Danzong tea and visited Fenghuang Mountain in Chaozhou, we soon found that there were so many different varieties of Danzong tea, each with its own unique taste.
