Treatment: anaerobic slow drying

The maturity of the coffee cherry picked by red fruit is almost perfect. After being carefully selected by farmers, the cherry is slowly fermented in an anaerobic environment, allowing the full aroma of the fruit to precipitate and brew, and even unexpected changes take place. When the powder is rolled in hot water, the rich and sweet fruit aromas open gracefully and softly, and the flavor is also clearer. Sipping the mouth is the top notes of passion fruit, followed by the aromas of honey and champagne. Full of juice, you may not be able to say exactly what kind of fruit, there are white grapes, there are tropical fruits, and even a hint of imperceptible rose tea. There is no need to worry about the possibility of over-fermentation. the processed beans leave a moderate and balanced sense of fermentation, a long-lasting fruity finish and a comfortable complex taste.

TOH, whose full name is "African Harvest Coffee Competition" (AFRICAN TASTE OF HARVEST COFFEE COMPETITION), is an annual high-end raw bean competition (NATIONAL) organized by the African Fine Coffee Association (AFCA) to improve the quality of local coffee. Divided into national (NATIONAL) and African regional finals (REGIONAL), based on the raw bean cup test criteria of CQI and SCA, the winners of national competitions can represent countries to participate in the selection of African regional finals.

Known as the "double champion", as the name implies, he won both the national championship and the African finals. Amedilaro won the first place in the Ethiopian national competition in the 201920 production season, and then stood out from the many national champions in the African regional finals to become the "double material" champion.
