There is a kind of milk coffee that has different names in different chain stores. It is called Furebai in Starbucks, Australia Ruibai in Ruixing, and Xiaobai in JPG. This coffee is Flat white, and we usually translate it into Australian white coffee.
The rise of Fu Ruibai
Fragrant white can become a popular product, inseparable from the promotion of Starbucks, a chain of coffee stores. The name "fragrant white" is chosen by Starbucks. Although the name is different, but each family's fragrant white coffee is to show a stronger aroma of coffee, so the barista will mix a cup of delicious fragrant white based on the coffee beans used at home.
A cup of freshly made fragrant white, the upper layer should have a small amount of milk foam, and at the same time, you should be able to see the Crema of espresso, so that the taste of the throat is full of milk, while the aroma of the coffee brought out by Crema is bright and pleasant, making people still nostalgic for the remaining charm in the mouth after drinking. (Crema is the golden foam that has just been extracted and floats on the top, often called grease.)
In the 1980s, Italians began to bring espresso to countries such as Melbourne, Australia. In Australia, a freshly made latte usually has a thick foam layer of about 1cm, which bulges slightly on the edge of the cup and tends to coffee-flavored hot milk. Although cappuccino has a stronger coffee flavor, due to its thicker foam and high 2cm "drum bag", the first mouthful of cappuccino is often more bubbly.
With the increasing demand for coffee, Australians prefer to taste the perfectly extracted Italian concentrated flavor and the thin and sweet foam in the coffee rather than the balanced taste of the hot latte. So the baristas made adjustments in the extraction, the proportion of milk, and the thickness of milk bubbles, gradually giving rise to Flat White, which has a more prominent coffee flavor. In 2015, Starbucks launched this new milk coffee drink and named it "Fuluibai", which soon became popular across the country.
The difference between Frappie and latte
Lattes and flavored white belong to milk coffee, both are coffee drinks mixed with espresso and milk, but the most essential difference lies in their taste.
Latte is about coffee and milk to achieve a sense of balance, not only can drink the taste of coffee, but also taste the sweet mellow taste of milk, the two cooperate with each other, do not cover up each other's taste. Furebai is to add milk to highlight the flavor of coffee, coffee is the protagonist, milk is only auxiliary. Therefore, the coffee flavor is more abundant and more full-bodied in Fuluibai.
Although Fuluibai has its own characteristics, there is no fixed production proportion. Baristas present this rich milk coffee in their own way, which leads to two different ways of making it. One is based on double essence espresso (Double Ristretto), which is mixed with a small proportion of hot milk to show a strong taste, and the other is a "small latte" made of single espresso (Single Espresso) and thin milk bubbles. Qianjie believes that if you want to highlight the unique taste of fragrant white, you should have these characteristics: strong coffee, small cups, silky and thin milk bubbles.
Compared with other hot milk cafes, Frieber's milk foam is the thinnest, usually in 0.3~0.5cm. The word "Flat" in Flat white means flat, and the foam must be so thin that it doesn't bulge so that every sip of espresso is covered with a thick layer of foam. So Fuluibai is also known as "plain white coffee". Latte milk bubbles are mostly bulging around 0.5~0.7cm, while Australian White Coffee milk bubbles can only be below 0.5cm, otherwise it is difficult to reach a "flat" liquid level. Qianjie hopes that the taste of Fu Ruibai is as smooth as cream and not too "water", and the foam layer of 0.3cm will be retained.

Qianjie believes that the derivation of Freibai stems from everyone's pursuit of the flavor and taste of boutique coffee beans. Therefore, each coffee shop presents its own unique style according to its own coffee beans and its own understanding of Frieber.
For example, the Italian blend coffee used in Qianjie is a home-baked "sunflower sunflower blend". It is a combination of 70% Honduran sherry coffee and 30% Yega sherry sun-tanned cherry coffee. Milk needs less air than lattes, the foam layer is thinner and denser, and the temperature is better controlled at 55-60 degrees Celsius. Finally, mix the milk evenly into the coffee liquid.
