In front of the street, let's briefly talk about what Luo Dou is. Luodou is Robusta, this kind of coffee beans and Arabica coffee beans almost contract people's coffee consumption, of course, in the field of boutique coffee, it is mainly Arabica, you can hardly see Luodou, so if you want to taste 100% Luodou in a shop that sells hand-brewed coffee. Robusta is not a valuable coffee bean. in the futures market, its price is just over half that of Arabica coffee beans. However, because it is relatively rare in coffee shops, it is a novel coffee bean for those who like high-quality coffee.
In this regard, Qianjie intends to brew Luodou by hand and describe its flavor to everyone. The Luodou in Qianjie is from Vietnam, which is the world's largest producer of Luodou, and coffee production accounts for about 20% of the world's total coffee bean production. First, let's take a look at the characteristics of Luodou in appearance. The middle line of Luodou is "1-shaped". The baked beans are swollen and full, like small steamed buns. Dry fragrance is generally the smell of spices, baked nuts and baked bread.
The Luodou in the front street uses deep roasting, so the hand flushing parameters use the method of deep roasting coffee beans. First, let's smell the wet fragrance, the aroma is not obvious, it smells like hazelnut and caramel. When tasting, the first feeling is that there is not too much taste, will not be very bitter, but the taste of grain is very heavy, a little like the very rich mugi-cha, the taste is relatively rich, the taste is also relatively thick. The flavor performance at this stage is not brilliant, and it is not bad, so keep to the rules! When you taste the coffee again in the medium and low temperature stage, the first smell of rubber will come to the nostrils, and then the taste of the grain will be heavier, the cleanliness will be lower, and the tail rhyme will have a fishy, bitter taste.
The flavor of Robusta coffee beans is not flattering, because the sources of bitterness such as chlorogenic acid and caffeine in Robusta are higher than those in Arabica, which is still the same. Robusta is naturally more bitter than Arabica. And Robusta is generally planted below 800 meters above sea level, and its cleanliness and flavor are naturally not as good as those grown in Arabica at high elevations. Of course, there are some better quality Luodou, the flavor of this kind of Luodou will be cleaner, but the main flavor is peanut butter, walnut, hazelnut, wheat, caramel and so on. Of course, Luodou also has advantages, such as Luodou has higher caffeine and rich fat, which can provide mellow taste. Luodou may not have the desired flavor when used alone, so the Luodou in front street is used to match with Arabica. This coffee bean is an Italian commercial mix in front street, using 10% Robusta made from Brazil and Arabica of Colombia. Make espresso that can enrich the oily taste without losing the flavor. Finally, if you really want to try 100% Luodou, you can go to some department stores with international zones, and there will be some imported coffee beans on the shelves. Qianjie bought a bag of Vietnamese Zhongyuan No.1 Luodou a few years ago, and when it was opened, it was greasy and milky (it was later found out that condensed milk and sugar were added to the roast).
