What is Project Red Cherry? Which coffee bean producing areas in Ethiopia is implemented? Introduction to sun-cured red cherries
Yirgacheffe has always been one of the important coffee producing areas in Ethiopia. The coffee produced in this region has elegant floral aroma, bright and fresh fruit acidity and other flavor characteristics, which is the first choice for many people to enter the boutique coffee, which is why Qianjie Coffee will list the beans in the region as an entry selection.
The area has a unique coffee growing environment, located in the middle of the country, belongs to the Great Rift Valley region of East Africa, and is one of the highest coffee producing areas in the world, growing 1700-2100 meters above sea level. At the same time, it has been a wetland since ancient times, with abundant water resources, soil rich in phosphoric acid, high altitude and various topography have created a variety of microclimate, there is a large temperature difference between day and night, which is very suitable for the growth of coffee here.
The production area is a typical courtyard planting, coffee trees are naturally scattered in forests, farmland and backyards, mainly by farmers or cooperatives. In the harvest season, farmers hand them over to nearby treatment stations or cooperatives for treatment and export.
However, since the price of coffee was not high in the past, the income of farmers was not much, but in order to earn more money, they had to rely on quantity. As a result, in the harvest season, farmers harvest all the fruit on the tree, regardless of whether the fruit is ripe or not, so this batch of coffee fruit contains some immature or ripe fruit, or even necrotic fruit. Because of the low quality, local acquirers and processors will depress prices to buy coffee beans from farmers, thus falling into a vicious circle.
This approach continued for a long time until 2007, when a raw bean seller from the Netherlands discovered the drawbacks and thought that the current form was not conducive to development, so he put forward a plan to have the best of both worlds: the Red Cherry Project (Operation Cherry Red).
Trabocca, one of the largest coffee and bean vendors in the Netherlands, has proposed the Red Cherry project, a project to improve the quality of small-scale farms. In accordance with the requirements of the project, Trabocca will invite local farms to produce a batch of coffee beans for it during the harvest season, each of which is between 1500 and 3000 kilograms. These batches need to be picked by hand and 100% ripe all-red fruit, so Trabocca will buy these batches at a price several times higher than the market.
In this way, the income of farmers can be improved, but at the same time, in order to ensure quality, farmers will invest more time and energy on the quality of coffee beans, and the price of raw beans will naturally rise. In addition, Trabocca will require small batches to give the processing plant more time and energy to process the coffee fruits to ensure the quality.

However, Trabocca will not buy all the coffee beans, and Trabocca will also conduct two cup tests on the coffee beans received in the cup testing rooms of the Ethiopian capital and Amsterdam in the Netherlands. Only those coffee beans that meet the standards will be acquired and will be paid high bonuses. In addition, Trabocca will invest in processing plants, increase equipment, provide financial loan support and impart knowledge to farmers, improve production, assist local production and provide better quality coffee beans.
Generally speaking, the Red Cherry Program is to encourage farmers to complete every process of coffee picking, processing and so on by increasing the purchase price of high-quality coffee raw beans. The quality of the coffee beans produced in this way is guaranteed, the taste is better, and it can be recognized by the market, thus balancing the higher purchase price of coffee. At present, the program shows the flavor of Ethiopian coffee in coffee-producing areas with unique flavors, such as Yega Snow, Sidamo, Penga Forest, Lekanti and so on.
At present, the coffee beans of the red cherry project in Qianjie come from the Yega Chuefei producing area, using sun treatment, which can give the coffee beans a rich fruit aroma with fermented aroma, coupled with the unique flavor of the Yegashifi producing area. Will use shallow baking, through hand flushing, can smell slightly fermented fruit, the entrance will have fresh lemon acid, berry, strawberry flavor, refreshing taste.
