Because the humid environment will make coffee powder more likely to cluster and agglomerate during grinding, this will make it easier for the coffee to produce channel effects during the extraction process, which in turn affects the taste of the coffee. If we want to reduce the occurrence of channel effects and make the extraction and taste of espresso more stable, then we need to solve the root cause of the channel problem-agglomerated coffee powder. The needle-type powder dispenser is also what we often call a powder dispenser. As shown in the picture above, it is a type of coffee auxiliary tool equipped with many thin needles. By using such tools to stir in coffee powder, the agglomerated coffee powder can be broken up, and the probability of channel effects will be reduced. Then because this method was invented by John Weiss, it was named: Weiss Distribution Technique (WDT). However, not everyone will have a set of cloth powder dispensers at home. In this experiment, three portions of espresso were extracted for verification. Before concentrating and extracting, toothpicks were used to break up the coffee powder. The parameters were 20g of powder and a powder-to-liquid ratio of 1:2 (40ml of coffee liquor was extracted), and then observed whether they would produce channel effects during the extraction process. Without channel effects, the average time for 20g of powder to extract 40ml of coffee liquor was 30±2 seconds. This was the result obtained by Qianjie using a cloth powder injection to extract 3 cups of espresso.
Then again, Qianjie will first briefly introduce the characteristics of these three cups of coffee during the extraction process and taste, so that we can compare it with the version replaced with toothpicks in the future: these three cups of coffee all have the same performance, not only in the extraction process. There was no sputtering during the process, and the taste was very balanced, the flavor was obviously outstanding, and the taste was smooth and mellow. Introduction is over! The specific steps are as follows: ① First, we first put the coffee powder into the powder bowl.② Then, we took out 2 toothpicks and staggered them to stir the coffee powder in the entire flour bowl.

③ After the stirring is completed, fill and press the coffee powder, button on the brewing head for extraction.④ When the coffee machine extracts the specified liquid weight, we can close the water valve and stop the extraction.
Then Qianjie extracted two cups of concentrate according to this process, and then concluded by observing the coffee outflow status and the taste of the coffee during the extraction process: toothpicks are not suitable for replacing cloth powder injections. There are two reasons. The first is that the toothpick is too thick! Each needle of the cloth powder injection is very slim, so they can break up the coffee powder without affecting the distribution of the coffee powder. The toothpick will be very, very thicker than the needle, and will push the coffee powder away when it is used to stir. This not only fails to have a good dispersing effect, but also changes the distribution of coffee powder (it is easy to push coffee powder out of the powder bowl);
The second reason is that toothpicks are not easy to hold! Unless you use something to fix the toothpick, you won't be able to use multiple toothpicks to break up coffee powder at the same time. This will greatly reduce the effect of breaking up the agglomerated coffee powder, so the three concentrates stirred with toothpicks still splash during the extraction process.
