Note: it is best to use a professional fine-mouth coffee pot, ordinary kettle water is too large, generally this kind of fine-mouth pot is about 280-500.
Siphon boiling method (Siphon)
At present, most Japanese coffee monopolies in Taiwan like to use the style, commonly known as "Saifu." because it feels so beautiful, it is like a chemical danger room, which once detonated a coffee fever in Taiwan, especially in many personalized small shops. the principle is to heat the glass bottle with an alcohol lamp to make it in a vacuum, and then extract the coffee by the principle of vapor pressure.
1. First boil the boiling water in advance, pour it into the glass bottle at the bottom, and then heat it again with an alcohol lamp.
two。 Then put the ground medium fineness coffee powder into the top glass bottle (about 12 grams per person, boiling water about 120cc, and so on). After the water in the lower flask begins to boil, insert the top glass bottle and fix it. (note that the coffee cannot be extracted perfectly by inserting it too early.)
3. After the boiling water at the bottom is completely raised into the glass bottle above, stir the coffee powder with a long spoon to make it dissolve evenly, wait for about a minute or so, turn off the alcohol lamp, and the coffee liquid will be filtered by the filter cloth and flow back into the flask below. you can remove the funnel above and pour out the coffee in the glass bottle below.
