Personal experience in handling raw beans, proper storage environment, coupled with clean, breathable and odorless cloth bags is the best solution. On the one hand, the cost of cloth bags is higher than that of plastic bags, and most places selling raw beans will not use them. On the other hand, if the environment in consumers 'homes is not good, the quality of raw beans may be affected by the environment. The use of plastic bags is certainly not impossible, but you need to pay attention to the following two points:

First of all, plastic bags should store a small amount (less than 2 pounds) of fresh raw beans. For fresh washed beans with high moisture content, more than two pounds of green coffee beans are placed in a sealed transparent plastic bag. If the ambient temperature is slightly higher or exposed to light, the moisture may be blocked in the bag and cannot be discharged, resulting in deterioration or even partial mildew of the green beans. New beans, washed beans, large quantities (2 pounds or more) stored, personal advice is still appropriate to bag. Old beans are better.

Second, pay attention to whether the plastic bag itself has a smell. You can open the plastic bag before use and let it sit for ten minutes to disperse the plastic smell. How long is the best taste period for raw beans? In personal limited experience, under the premise of proper storage, there is no certain formula for time and taste appreciation period, but it is related to bean seed and processing method. Washing treatment, bright flavor beans, such as Kenya, Costa Rica, Kona, etc., really should not be stored for a long time, fresh new beans have the most fragrant coffee fruit flavor.

Half-washed beans, which have a thicker flavor and are not known for their acidity and brightness, such as Asian beans Sumatra and some Brazilian beans, allow longer storage times. After one to several years of proper storage, the flavor often does not decrease, but it is sweeter and smoother. This is also the origin of Aged Sumatra, Aged Java and even Aged Sulawesi. Dry processing of beans such as leaf door, part of Brazil, can also be allowed to store for a long time, flavor does not necessarily decay, but also may enhance the good fermentation flavor and wine aroma.
