The processing of coffee can refer to: the process of extracting coffee beans from coffee fruit, also known as coffee treatment; the process of brewing coffee beans, also known as coffee extraction; the process of turning coffee liquid into instant coffee powder.
What is coffee bean treatment?
The coffee bean treatment method is about to remove the pectin from the pericarp of the coffee fruit and extract the coffee core (beans). There are three traditional methods of coffee bean treatment: washing treatment, sun treatment and honey treatment.
Different processing methods are adopted according to different regions, climates, types of coffee beans and other factors. Coffee beans processed by different methods will also show different flavors.
The washed coffee beans are first removed from the peel and pulp of the coffee, and then put into the pool for fermentation. The acid produced by the process dissolves the pectin and after washing with clean water, a very clean layer of parchment (coffee fruit endocarp) is retained to wrap the coffee beans and then dried in the sun.

The honey treatment rule is to remove the peel of the coffee beans and retain the pulp pectin for sun drying. The more pectin is retained in the pulp, the sweeter the coffee will be, but the more attention needs to be paid to the drying process, or the coffee beans need to be dried in a shady way to avoid excessive fermentation of sugar.

What is coffee extraction?
The coffee extraction method is to grind the coffee beans into different degrees of particles (powder), let the water come into contact with the coffee powder in different ways, and then extract the soluble substances from the coffee powder. At present, the mainstream extraction methods of coffee are trickling extraction, pressurized extraction and cold bubble extraction.
Drip filtration extraction is hand-brewed coffee, one needs to use a filter cup into the filter paper, and then pour hot water through a special kettle to make the coffee powder on the filter paper tumble, and the soluble flavor substances will also come into contact with the water. and dripping clean coffee liquid after passing through the filter paper. Pressurized extraction, that is, Italian espresso, through a short period of time in the pressurized device to quickly inject hot water through the very fine grinding of coffee powder, extract extremely high concentration of coffee liquid. Cold bubble extraction, that is, cold extraction coffee, is to soak the coffee powder in normal temperature water / low temperature water, and then put it in the freezer to extract. The advantage of low temperature extraction is that it is not easy to extract bitter substances from coffee, so after coffee extraction is completed and coffee grounds are filtered with filter paper / mesh, the coffee tastes full, full-bodied and clean. The disadvantage is that the extraction time is long, and it usually takes 12-18 hours to soak.
How to make instant coffee powder?
There are two kinds of instant coffee powder: one is to brew with hot water, and the other can be brewed with cold extraction, that is, freeze-dried coffee.
Instant coffee: a dry coffee extract obtained by evaporating water from the coffee extract. Instant coffee can quickly dissolve in hot water, and it takes up less space and volume in the process of storage and transportation, so it is more durable to store.
Freeze-dried coffee: instant coffee made by freezing liquid espresso and removing ice by sublimation.
