Prepare hot water, 1200-1400g.
Weigh 50-60g coffee beans.
In the process of heating water, grind the coffee beans into powder. The thickness of the powder is about the same as that used in the French kettle.
Unfold the filter paper and put in the Chemex.
Pour some hot water on the filter paper to soak it through and warm the bottle at the same time. You can also pour some hot water into the cup to warm it.
Pour the ground coffee powder into the filter paper and shake it a few times to make the coffee powder distribute more evenly inside and outside.
Start brewing, start gently watering the circle from the center of the coffee powder, and slowly draw the circle, twice as much as the coffee powder. For example, if the coffee powder is 50g, then the amount of water is 100g. Be careful not to let the water pour to the very edge!
Then wait for about 30-45 seconds to make the coffee powder swell. We usually call this "steaming" expand or bloom in English. Whether the water is evenly watered will affect the final flavor of the coffee.
The second watering is also gently drawing a circle from the middle to the outside. Roughly control the speed to 2 minutes 30 seconds to 3 minutes to complete watering.
