According to experts from the China Coffee Trading Network, the two trays are adopted in this way because it helps to speed up the selection of beans and does not make the eyes tired.

Put the right amount of raw beans in the tray and divide the raw beans into five equal parts evenly between the index finger and the middle finger. A small amount of hand selection will help the screeners to concentrate and reduce the probability of missing defective beans.

How can we "discern the beads" and find out every defective bean? According to Fulaigao coffee experts, in order to achieve this effect, it is necessary to carefully distinguish the color and shape of each bean grain, scanning the eyes from right to left, not letting go of a trace. Over and over again, pick out the average value of defective beans that may be mixed in a tray, and take this average as data to find out the defective beans in each tray.
