Drinking coffee scientifically is the key.
Coffee, tea and cocoa are called the three major drinks in the world. Every day, about 1 billion people start their day with a cup of coffee; couples often go to warm and romantic cafes to enjoy strong coffee, which has become one of the most popular drinks in people's lives. Recently, some media revealed that PX (p-xylene) has the same carcinogenic level as coffee, which is a "possible carcinogen".
The Joint expert Committee on Food Additives (JECFA) of the World Health Organization and the Food and Agriculture Organization of the United Nations pointed out in a 2005 report that instant coffee contains a substance called acrylamide.
According to the definition of Wikipedia, acrylamide is a white tasteless flake crystal, which can be used as a water-soluble thickener for sewage treatment, gel electrophoresis, papermaking, ore treatment and non-ironing treatment of cloth. However, the foods we usually eat may also contain acrylamide. According to a study conducted by the Consumer Council of Hong Kong, all foods containing carbohydrates produce acrylamide after being fried. Acrylamide occurs when the temperature reaches 130 ℃, especially when the temperature is more than 160 ℃. Instant coffee will also produce a certain amount of acrylamide in the process of roasting and drying at high temperature, which is the basis for people to worry about instant coffee causing cancer.
Zhang he, chief physician of traditional Chinese medicine at Shanghai Zhongda Cancer Hospital, said that when acrylamide enters the body, it binds with guanine on DNA to form adducts, leading to genetic material damage and gene mutation. The results of animal experiments show that acrylamide is a possible carcinogen. Long-term low-dose exposure to acrylamide can lead to symptoms such as drowsiness, mood and memory changes, hallucinations and tremors, accompanied by peripheral neuropathy (glove-like sensation, sweating and muscle weakness). However, there is no sufficient evidence to show that there is a significant relationship between the intake of acrylamide through food and the occurrence of certain tumors in humans.
Dong Jinshi, a famous food safety expert and executive vice president and secretary-general of the International Food Packaging Association, said, "caffeic acid is only an organic acid in coffee, which is also found in other agricultural products, so it is a bit far-fetched to say that coffee causes cancer. In addition, there is a note in the list: "there is evidence that coffee drinking is inversely related to colorectal cancer; coffee drinking does not cause canceration of other organs." In other words, the idea that coffee causes cancer is unscientific and is taken out of context. "
Gu Zhongyi, director of the Beijing dietitian Association, said: "the JECFA report points out that the foods with the highest acrylamide content are potato chips, potato chips, and then coffee. Therefore, the public need not be too nervous about coffee causing cancer. "
Dong Jinshi warned: "drinking more than five cups of coffee a day is addictive and can endanger your health. Drinking coffee in the morning does help to clear your head, but you must drink it only after breakfast, otherwise it is easy to damage gastrointestinal function and avoid insomnia. Drinking coffee before going to bed will stimulate vascular dilation, speed up blood circulation and increase cardiovascular burden."
Gu Zhongyi pointed out: "people who are sensitive to caffeine and have cardiac dysfunction, as well as pregnant women and children are still not recommended to drink it." Long-term coffee drinking can damage the gastroduodenal mucosa, and patients with digestive tract ulcers should also be cautious. Drinking coffee can also aggravate the illness of nervous people. In addition, if you drink instant coffee, you should add less companion and sugar. "
