Recently, the advertisement of KFC papaya egg tart has been very popular. I should have been immune to this kind of change, but the curiosity of food eventually gained the upper hand. So when I went to KFC with someone, I finally got what I wanted, but as expected.
Egg tarts have a hint of papaya flavor, a few pieces of papaya flesh smaller than the finger, affixed with a tropical label, so the price can be higher than the original egg tart. In the season when you can buy a whole papaya for three yuan, it is obviously not cost-effective, but countless people are willing to take out their pockets. Delicious food also needs to be packaged and seasoned.
The egg tart on the advertisement is perfect in appearance and very seductive, but there is some gap in kind. I began to think critically that if I did it myself, I would at least be better in appearance. I bought a papaya on the way back and planned to have a less spectacular competition. A thousand layers of pastry has long been made, and light cream is always available at home, so everything is short of Dongfeng. When baking egg tarts, the smell floating out of the hallway attracted the neighbor's sister-in-law to say directly-I smelled it from afar!

Ingredients:
Egg tart: 220 grams of light cream, 160 grams of milk, 80 grams of fine sugar, 4 yolks, 15 grams of low-gluten flour, 15 grams of condensed milk, the right amount of papaya
Thousand-layer pastry: 220 grams of low-gluten powder, 30 grams of high-gluten powder, 40 grams of butter, 5 grams of fine sugar, 1.5 grams of salt, 125 grams of water, 180 grams of butter (wrapped in)
Production process:

Peel papaya and cut it into small pieces
Pour light cream, milk, granulated sugar and condensed milk into a bowl, heat and stir until the fine sugar is dissolved. After cooling to room temperature, add egg yolk and low-gluten flour, stir well, sift to form egg tart water. Put it aside for backup.
7. Roll up a thousand layers of pastry which is 0.3CM thick and refrigerate for 30 minutes.
8. Refrigerate the thousand-layer pastry rolls, take them out and cut them into small rolls of uniform size.

13. Let the egg tart rest and relax for 20 minutes.
14. Put 2-3 diced papayas at the bottom of each egg tart.
15. Pour in the egg tart water and fill it with 7 points.
16. Put it into a baking pan and bake in a preheated oven at 210 degrees for about 25 minutes until there is a focal point on the surface of the egg tart. After baking, add 2 pieces of fresh diced papaya to the surface of the egg tart.
TIPS:
1. Because the tart skin expands when it is cooked, the egg tart water only needs to be filled to 7 cents.
2. After the tart is pinched, let it stand for 20 minutes, then pour in the egg tart water and bake. Otherwise, the tart will retract seriously in the process of baking, resulting in the overflow of egg tart water and fall short of success.
3. When pinch the skin, the bottom should be as thin as possible (it doesn't matter if it is as thin as a piece of paper), otherwise the bottom will taste wet and not crisp.
4. When making egg tart water, heat the whipped cream and milk so that the fine sugar can be completely dissolved. If powdered sugar is used, it can be stirred directly without heating. In order to ensure that the egg tart water has a beautiful luster, it must be sifted before use.
5. If you haven't baked the focus for a long time, you can move the baking pan to the top and bake it for a while. Or if the oven has a broil function, you can use it to heat egg tarts for 30 seconds-1 minute and focus will appear. But be careful not to burn it.
6. If you don't put papaya, it will be the original Portuguese egg tart.
