Boutique roaster opens a new era of coffee in China
Coffee consumption in China is growing at a rapid rate of 16 percent a year, according to statistics from the International Coffee Organization. China imported 1.6 million bags of coffee between 2013 and 2014, about 9600 tons, ranking only 17th in the world; coffee consumption in Europe and the United States is 4kg per person per year, and the Chinese are only 83g. It can be said that China's coffee market still has broad and huge consumption prospects. With the increase of Chinese people's awareness of coffee, the domestic coffee market has also ushered in spring.
At present, the domestic coffee industry has blown up a new storm of "home roasting" fine coffee. What is "home cooking"? According to Qiu Xuexin, dean of Hong Kong Fubiao International Boutique Coffee College,"home roasting" is a self-challenge of the coffee industry. In the past coffee market, most cafes did not publicize the awareness of coffee culture. In addition to milk coffee products, other coffee products were rarely asked for, and there was not much trace of fine coffee.
But nowadays, with the promotion of coffee culture and the increase of awareness of fine coffee, consumers are increasingly demanding coffee quality. In order to meet market demand, more and more cafes began to choose to buy coffee green beans, and then roast their own ripe beans, making "home roasting" popular, all of which cannot be separated from a key equipment-coffee roaster.
Coffee beans after a long time after high temperature roasting, to remove moisture, through the Mena reaction, caramelization reaction, and finally produce burst, into coffee beans, this process we call coffee roasting. Although coffee roasting seems simple, it contains a lot of knowledge. The quality of coffee roasting equipment plays a decisive role in coffee quality.
