Grinding coffee powder with the right thickness is very important for making a good cup of coffee, because the extraction of water-soluble substances in coffee powder has its ideal time, if the powder is very fine and cooked for a long time, resulting in excessive extraction, the coffee may be very bitter and lose its aroma. On the other hand, if the powder is coarse and cooked too fast, resulting in insufficient extraction, the coffee will be tasteless because there is no time to dissolve the water-soluble substance in the powder.

Each coffee utensil has its own suitable degree of grinding, so we don't use whatever degree of grinding we want. As mentioned above, the coffee powder is too coarse or too fine to make coffee, that is to say, the most suitable grinding degree is medium to medium roughness.

The following is the relationship between the grinding degree of coffee powder and the extraction method:

1. Suitable for fineness grinding: Turkish copper pot, mocha pot, espresso machine.

2. Suitable for medium grinding: filter paper dripping filter, flannel dripping, plug air kettle (also known as siphon kettle).

3. Suitable for roughness grinding: dripping coffee machine, dripping filter pot.

There is another reason why espresso and Turkish coffee use deep-roasted coffee. Because deep roasting will make coffee beans soft and easy to grind a little finer. Although this is a bit superfluous, some Italian-made bean grinders cannot crush lightly roasted hard coffee beans. The grinder is originally designed for deep-roasted coffee beans, which can break down immediately when used to grind light-roasted coffee beans with hard texture.
