We know that whether direct fire, semi-direct fire, hot air or electric baking, etc., although modern instruments + modularization + computer precision control, despite accurate temperature control, ventilation, cooling and other equipment, however, because a large number of coffee beans are rolled and stir-fried in a relatively small closed container, it is inevitable to be contaminated with smoke more or less during the baking process. This is the biggest problem that many baking masters can hardly avoid completely. The biggest advantage of hand-net baking is that the whole baking process is an open environment, although silver skin flying everywhere is annoying, but this is also one of its greatest advantages, so the coffee beans baked by hand-net are very pure and have no smoke smell at all. The best coffee beans can be baked with the most primitive tools. I have seen some people use edible "foil" to wrap the hand net up and bake, but this loses the advantage of the hand net. I have seen many times that the domestic use of two semicircular stainless steel leakage mesh combined into a circular hand net, in Taobao also has similar spherical hand net sales, the price is very cheap. While Japanese hand nets are round and flat-bottomed, but the price is also relatively expensive, so many friends choose cheap spherical hand nets.
However, after my practice and repeated comparison of the two kinds of hand nets, I think that the round flat bottom is the best for hand net baking for the following reasons:
The flat-bottomed hand net can spread the beans evenly, and can shake and flip the beans with very light wrist strength, so girls and people with weak physical strength can also easily operate and bake them.
Because the flat-bottomed hand net is a neat horizontal plane, which is consistent with the fire source of the circular plane, the heating area is relatively uniform, and the phenomenon of uneven frying is not easy to occur.
The flat-bottomed hand net has a large area and is heated evenly, and the color of the baked beans is basically the same.
This emphasis is not to say that round hand nets cannot bake coffee, but compared with flat-bottomed hand nets, spherical hand nets obviously have the following fatal weaknesses or serious deficiencies:
First, because the bottom is semicircular, coffee beans can not be evenly laid, so a lot of beans have to be piled up, which in itself is not conducive to hand-net baking.
Second, in the process of baking, in order to heat each coffee bean evenly, a simple horizontal rotation and shaking like a flat-bottomed hand net will not work. It must be vigorously bumped up and down and shake to make the coffee beans heated evenly as far as possible. Some friends who love hand nets even invented the word "spoon", but in this way, the whole baking process will become quite physically exhausting. Only strong men can be competent, and it is difficult for girls to do so with their weak physical strength and wrist strength.
I once watched a video baked by a domestic ball-shaped hand net. The strong man had super physical strength, and his hands clenched the ball-shaped hand net and shook it vigorously all the time, which left a deep terrorist impression on my opponent's net baking. through the exchange with foreign friends who specialize in baking and my personal practice over the past two years, I found that this is actually a great misunderstanding of the opponent's net baking.
