What is coffee cup test?
The quality of coffee is judged by the sense of taste, which is called the "coffee cup test", while the person who evaluates it is called the "appraiser". The method is to pour 10 grams of coffee powder into a warm coffee cup, then pour 100 C boiled water into the cup, stir thoroughly with a spoon, let the powder precipitate, and then remove the foam from the surface. First of all, identify its aroma, and then put the coffee in the mouth to determine the sour, bitter, sweet procedure and whether there is a peculiar smell. After the test, gargle and record the results immediately, and then continue the next cup of test.
The purpose and function of coffee cup test:
1. Through scientific methods to test the quality of coffee, so as to choose your favorite coffee.
2. For coffee beans with the same place of production but different roasting methods, cup test can be used to determine which baking method and roasting degree is the best.
3. If the baking test is the same for different producing areas, the cup test can be used to determine which producing area has the best coffee beans.
Coffee beans are divided into raw beans (or raw beans) and cooked beans, and raw coffee beans can be divided into raw beans with shells and raw beans without shells:
1. Raw beans with shells: refers to coffee beans with endocarp and silver skin on the outside, which can be used as seeds. The shell can be moisturized, mildew-proof, and stored at room temperature for a long time (1-2 years).
2. Raw beans without shells: coffee beans that are treated and the peels and silver skins are removed.
3. Coffee cooked beans: it refers to the coffee beans that roast the raw beans.

Coffee cup test steps:
1. Put the coffee beans in a basin on the table (4 kinds of raw beans and 4 kinds of cooked beans), and put the glass in four positions.
2. First smell each kind of raw beans and cooked beans. When smelling beans, pick up the basin containing beans with both hands, put them on the edge of your nose and gently smell each kind of beans, smell whether raw beans are moldy and smell the aroma of cooked beans.
3. Put the ground powder into the cup, and then quietly pour the boiling hot water into each cup. After pouring hot water, first take a little time to adjust your mood, and then use a spoon to stir the powder in each cup.
But remember to wash the spoon with boiling water every time you finish mixing the cup. Before washing the spoon, smell the smell on the spoon and predict what it will taste like.
4. After the coffee powder was precipitated, its solubility was observed.
5. Smell the taste of each cup of coffee. If the smell is soft and fragrant, it means good coffee. If there is a stink of soil, medicine, or even other odors, the taste is naturally not good. 6. Start the cup test. Never drink the coffee liquid during the test cup, but hold it in your mouth. If you drink it, no matter how much you gargle, the taste of the coffee you drank before will remain in the depths of your mouth, making it impossible for you to correctly grasp the taste of the coffee to be tested next. The way to try the cup is to scoop the coffee liquid out of the cup with a spoon, then sip it as loudly as possible by drinking hot soup, then put the coffee liquid against the front teeth from the tongue to judge its smell, and then let the coffee liquid circle around the mouth. chew its taste, spit the coffee liquid in the mouth into the trash basket, and then put the spoon into the previously prepared warm water to wash; begin the next cup test. Note, do not try just one cup and jump to conclusions. It is best to repeat the test several times to see what it tastes like when it is hot, when it is warm, when it is cold, and when it is reboiled. Some coffee will taste sour when it is slightly cold.
