This is the work of winning the Japanese barista contest in 2003. The theme of this year's competition is (summer). At that time, I wanted to make a place that no one had ever tasted before, like Dream Espresso. Therefore, the well-known Spuma (foam, Italian) will be introduced into this work through the spread of the famous Spanish restaurant El Bulli. [materials]: Espresso solo 1 cup (20~30ML), 30g fresh cream (38% cream), 10g brown sugar, right amount of cappuccino Spuma (see the following method), right amount of chocolate (chopped)

[system]:

1. Put the whipped cream in a snow cup (no ice) and shake continuously for about 30 seconds until it thickens. Then, just put it in the refrigerator and refrigerate it.

3. Put the ice in another sherk glass, pour 2 into it, shake well, then pour into a cocktail glass. Please be careful not to shake for too long so as not to become too thin.

4. Pour the cream of 1 on top of 3.

6. Finally, sprinkle the chopped chocolate to decorate.

[materials] Espresso Solo

1.50ML Gilding tablets (soaked in cold water) 1.5 tablets

two。 Milk 300ML

3. Fructose 100ML

4. Soda grab

1. Squeeze the bubbling Gilding water dry, put it in a mixing basin, heat and melt the insulated water.

two。 After Gilding melts, remove the Espresso from the hot water and add the mixture.

3. After mixing the milk and fructose, drip it into 2 pieces like silk and mix.

When mixing, remember not to let it form foam.

4. Cool the ice water in the mixing basin and let it cool quickly.

5. Then, pour into the soda jar, inject carbon dioxide, shake slightly, and refrigerate for about 6 hours.

Gilding: animal glue, also known as gelatin, is a kind of glue. Geltin; Gili T Geltin-T is gelatin, which has mixed texture. It is a material used to make pudding and jelly, which has a solidifying effect.
