Compared with the traditional sun-treated Harar region, sun-dried Yejia Shefi is not common. As the Yejia Shefi region where Ethiopia's first washing treatment plant is located, coffee-goers are more familiar with washed Yejia, which is famous for its elegant lemon and citrus flavor.
The coffee flavor of washing treatment is less likely to have wild flavor, with pure, refreshing characteristics, suitable for light roasting degree; this washing Ethiopia can reach the highest grade G1, which is already a grade with few defects.

This bean comes from a single farm in Ethiopia and is processed by the Worka cooperative. Alemayehu Alako Farm is a member of the Waka Cooperative.
Woka Cooperative, located in the south of Gedeb District, was founded in 2005 and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) that year, which is known for producing high-quality sunburned Yirgacheffe. The Waka Cooperative has about 300 coffee farmers under its umbrella. Founded in 2002, YCFCU also includes 26 other cooperatives serving more than 45000 coffee farmers.
Flavor: Bright floral, dry and wet aromas with strong citrus flavor, lemon, kumquat, white grape juice and so on in the front, colorful flavor, middle and rear is rich citrus sour, like soda rich sweet feeling, distinct personality, outstanding, very rare.
Ethiopia's coffee classification system, with washed Grade 2 and dry Grade 4 as the highest grade, so only Yirgacheffe WP G2 was previously found on the market.
Note: Yirgacheffe G1 is a grade specially requested by Mitsubishi of Japan to Ethiopia Coffee&Tea Authority. It first appeared on the market in 02-03. G1 grade beans are produced not by screening as usual, but by strict hand-selection from the highest elevation and excellent soil of Knoga in Yirga village. The green beans are almost the same size, the appearance is quite beautiful, and there are almost no defective beans. After drinking, it feels more able to show the characteristics of Yirgacheffe. Also because of the strict production process, the annual production of Yirgacheffe G1 is relatively rare, with an average of about 600 bags.
Yirgacheffe is mostly purified by washed method, which is fermented in washing tank for about 72 hours and dried directly outside the factory. The raw beans are manually selected, and after passing the quality inspection by the Ethiopian Coffee Cocoa Management Agency, they are traded and exported through competitive bidding. Its annual production is about 225,000 bags (60kg per bag), mainly exported to Northern Europe (mainly Germany) and Japan in the past, and more recently it has gradually attracted the attention of North America.
