Grinding is the key

Ideal grinding (plus the right amount of coffee powder and moderate tamping) ensures that the coffee flows slowly and smoothly into the cup. If the coffee powder is ground too thickly, the coffee will gush out, thin and light in taste. If it is too fine, the coffee will drip out very slowly and taste extremely bitter. The low-pressure coffee machine uses a conical filter grinder (the coffee powder is very fine but slightly granulated), and the effect is good. The economical and inexpensive knife-edge grinder can provide the appropriate grinding texture of coffee.

High-pressure commercial coffee machines need finer coffee powder. This kind of coffee powder can be easily ground with a professional tooth grinder.

The grinding must be very accurate. If you make a mistake in grinding, the taste of the coffee will be very different. Because the finer the coffee beans are ground, the worse the fresh-keeping ability is, so you can get the best taste by grinding and drinking at home. In Starbucks Coffee Shop, we constantly adjust the coffee grinding, and the ground kung fu coffee powder will be eliminated after more than an hour. If you buy ground coffee powder, you should not use too much coffee powder at one time and use it for several days.

The standard amount of coffee powder should almost fill the filter, but a little space should be left to prevent the coffee powder from expanding after soaking. If the amount of coffee powder is too small (or too coarse), the coffee will pour out instead of slowly and evenly. The standard filter press on a professional household coffee machine should be filled with about 7 grams of coffee powder (about 1.5 tablespoons). Using a smaller filter press, the filling amount of coffee powder should be reduced, and the amount of coffee produced will be reduced accordingly.

Tamping refers to the compaction of coffee powder added to the filter press. If the tamping is firmly pressed, the water can slowly penetrate the coffee layer and fully obtain its flavor. If the tamping pressure is quite strong and the rate of water outflow is still too fast, you can consider using a finer-grained coffee powder. On the contrary, if there is almost no tamping pressure, but the coffee flow rate is still very slow, you can switch to a thicker coffee powder.

The flow rate of kung fu coffee should be similar to that of pouring honey out of a spoon. Through the test of grinding, weight and tamping degree, the ideal flow rate can be obtained and the best flavor can be obtained.

Ideally, a serving of kung fu coffee should contain about 30 milliliters (1-1.25 ounces) and take about 20 seconds to make. Double kung fu coffee made with a large filter press should be 60 milliliters (2 ounces) for about 20 seconds, but use twice as much coffee powder.

The most common mistake in making kung fu coffee is to make too much coffee. If you keep the coffee machine running and make 60-90 milliliters (2 to 3 ounces) of coffee from the coffee powder that makes a cup of kung fu coffee, the coffee will become bitter and thinner, similar to stronger dripping coffee, rather than authentic kung fu coffee.

If the flow rate of kung fu coffee is too slow or the taste is extremely bitter, please reduce the tamping pressure, switch to thicker coffee powder or feed the amount of coffee powder. If the Kung Fu coffee is thin in texture and plain in taste, please increase the tamping pressure, switch to finer coffee powder or increase the amount of coffee powder.

Neither the stove nor the drip filter coffee maker can make real kung fu coffee. It should be noted that although the kung fu coffee machine uses a steamer to boil water, what passes through the coffee powder is not steam but hot water slightly below the boiling point, which is the most suitable for preparing kung fu coffee and extracting its best flavor.

If you like to drink a cup of sweet, milky special coffee, a moderately priced coffee maker will suffice. But if you want to often enjoy real kung fu coffee and foam coffee, buy a professional coffee maker and grinder, you will feel good value for money.

Coffee made by stove coffee machines and relatively cheap "foam coffee" machines (using cylinder presses instead of pump and piston presses) is the so-called coffee that many Italians drink at home, referred to as Caffe (Italian coffee). These coffee machines do not have enough pressure to make real kung fu coffee, and their ability to steam milk is limited.
